Substitution Recipes for General Menus
Festival
Ingredient Metric Standard Measure Method
Festival Mix 480 g 16oz 1 pack 1. In a stainless steel bowl, pour festival mix.
Water 180 g 6 oz
2 / 3 cups
2. Add water slowly using fork to distribute.
3. Use hands to gently knead mixture into a soft manageable dough.
4. Portion into 20 equal pieces.
5. Divide each into two equal pieces and shape into 40 long narrow
strips (½ inch by 1½ inch).
Oil 240 ml 8 oz 1 cup 6. Heat oil in frying pan over medium heat.
7. Place dough in hot oil to fry.
8. Fry for 3-5 minutes turning as necessary until golden brown.
9. Line baking tray with paper towel.
10. Place fried festivals in single layer on lined tray.
11. Cover securely with aluminum foil.
12. Hold festival in warm oven and serve hot.
