Emergency Menus and Recipes
DAY 3
MACKEREL & CUCUMBER SANDWICH
(Food From Animal, Fats & Oils, Staple & Vegetable)
Ingredient Metric Standard Measure Method
Cucumber 480 g 16 oz 4 small 1. Wash cucumber under running water.
Mackerel 1600 g 54 oz 8 medium

Black pepper 3 g - ½ tsp
Margarine 100 g 3 ½ oz 7Tbsp
Vinegar 20 ml ¾ oz 4 tsp
2. Line a tray with paper towel.
3. On the vegetable cutting board, thinly slice cucumbers (15 slices from
each cucumber).
4. Place cucumber to drain on lined tray.
5. Cover with paper towel.
6. Put in refrigerator.
7. Wash the top of can under running water and dry with a paper towel.
8. Open cans and using a colander drain excess liquid from mackerel.
9. Place mackerel in a stainless steel bowl.
10. Crush mackerel with fork or masher in stainless steel bowl.
11. Add margarine, black pepper and vinegar to mackerel.
12. Combine all ingredients with a fork into a smooth paste.
Bread 900 g 30 oz 30 slices 13. Arrange bread slices in two rows of 15 slices of bread each on a baking
sheet or a worktable.
14. Portion filling evenly for 15 sandwiches ( ½ cup on each sandwich).
15. Place filling neatly and evenly on one row of 15 slices of bread.
16. Spread filling evenly to the edges of each slice of bread with a knife.
