DAY 11
MASHED BANANAS
(Staple)
Ingredient Metric Standard Measure Method
Green bananas 1½ kg 50 oz 10 medium 1. Scrub and wash bananas under running water.
2. Peel bananas under running water.
Water 1200 ml 40 oz 5 cups 3. Add salt to water in stock pot and bring to boil over high

heat.
4. Add peeled banana to boiling salted water and reduce heat to
medium high.
5. Allow to cook for 20 minutes.
6. Drain bananas.
7. Place drained bananas in a stainless steel bowl.
Margarine 60 g 2 oz 4 Tbsp 8. Crush banana while hot.
Skim Milk Powder 60 g 2 oz 4 Tbsp
9. Add milk and margarine alternately while crushing bananas.
10. Hold and serve hot.
Purchasing Note: 20 unpeeled medium bananas weigh approximately 70 oz and yield approximately 50 oz peeled bananas.
