(57) Abstract: Shallow frying products comprising from 35 to 90 wt% fat, phytosterols and a
specific amount of salt and lecithin, and an aqueous phase with a pH of from 4.5 to 6.5 are less
prone to oxidation of phytosterols and unsaturated fatty acids under frying conditions.
