(57) Abstract: Shallow frying products comprising from 35 to 90 wt% fat, phytosterols <strong>and</strong> a<br />

prone to oxidation <strong>of</strong> phytosterols <strong>and</strong> unsaturated fatty acids under frying conditions.<br />
