As a chef, I fell bound-duty to deal with a problem that af-<br />
fects more and more customers: food <strong>in</strong>tolerance. Each client<br />
has his own needs and one might f<strong>in</strong>d, among them, some<br />
suffer<strong>in</strong>g from from celiac disease, which is to say, a person<br />
who has a permanent gluten <strong>in</strong>tolerance; this means that<br />
gluten cannot be taken because it can cause serious regional<br />
and systemic damage.<br />
Gluten can be found <strong>in</strong> many <strong>in</strong>gredients and therefore the<br />
utmost care is required when prepar<strong>in</strong>g food.<br />
In order to avoid possible sanctions, every restaurant or arti-<br />
sanal producer have to add to the HACCP a specific docu-<br />
ment concern<strong>in</strong>g gluten-free production; thus, it is necessary<br />
to draft a document that describes each stage of the handl<strong>in</strong>g<br />
of the product, from the receipt of raw materials to delivery<br />
to the consumer, def<strong>in</strong><strong>in</strong>g the precautions taken to avoid con-<br />
tam<strong>in</strong>ation and <strong>in</strong>structions <strong>in</strong>dicat<strong>in</strong>g how to operate <strong>in</strong> any<br />
situation at risk. The bureaucratic rigor required for the draf-<br />
t<strong>in</strong>g of this document is exp<strong>la</strong><strong>in</strong>ed <strong>in</strong> the need that, at any<br />
time, all the staff have to know what to do if they receive a<br />
request from a client affected by the disease. In order to have<br />
products suitable for people suffer<strong>in</strong>g from the celiac disease,<br />
manufacturers need to control products start<strong>in</strong>g from raw<br />
materials to the f<strong>in</strong>ished product. Moreover, it is necessary to<br />
constantly monitor the production process, work environ-<br />
ments, equipment. All this becomes even more important<br />
when you consider that you may experience dangerous cross-<br />
contam<strong>in</strong>ation from gluten. Thus, tak<strong>in</strong>g it to an extreme, it<br />
may happen that from an <strong>in</strong>gredient naturally gluten-free is<br />
obta<strong>in</strong>ed a contam<strong>in</strong>ated f<strong>in</strong>ished product.<br />
A complete elim<strong>in</strong>ation of gluten from a diet is not simple,<br />

una persona che ha un’<strong>in</strong>tolleranza alimentare permanente al GLUTI-<br />
NE: ciò significa che questa sostanza non può essere assunta perché<br />
gli può provocare seri danni sia distrettuali che sistemici.<br />
Il glut<strong>in</strong>e può essere presente <strong>in</strong> molti <strong>in</strong>gredienti e perciò è richiesta<br />
<strong>la</strong> massima attenzione nel<strong>la</strong> preparazione dei cibi.<br />
Per non <strong>in</strong>correre <strong>in</strong> possibili sanzioni, ogni esercizio di ristorazione o<br />
<strong>la</strong>boratorio artigianale a servizio di utenti celiaci dovrà <strong>in</strong>tegrare il<br />
piano HACCP con una documentazione scritta specifica riguardante<br />
<strong>la</strong> produzione senza glut<strong>in</strong>e: occorre, cioè, e<strong>la</strong>borare una procedura<br />
che descriva ogni fase del<strong>la</strong> manipo<strong>la</strong>zione del prodotto, dal ricevimento<br />
delle materie prime al<strong>la</strong> somm<strong>in</strong>istrazione al consumatore, def<strong>in</strong>endo<br />
gli accorgimenti adottati per evitare contam<strong>in</strong>azioni ed<br />
un’istruzione operativa che <strong>in</strong>dichi come operare <strong>in</strong> ogni situazione a<br />
rischio. L’apparente rigore burocratico richiesto per <strong>la</strong> stesura di tale<br />
documentazione trova il suo senso razionale nel<strong>la</strong> certezza che, <strong>in</strong><br />
ogni momento, tutto il personale sappia come comportarsi qualora<br />
pervenga <strong>la</strong> richiesta di un celiaco. Per disporre di prodotti idonei al<br />
consumo da parte dei celiaci, è necessario che le aziende produttrici<br />
applich<strong>in</strong>o un corretto piano di controllo delle materie prime e del<br />
prodotto f<strong>in</strong>ito. Inoltre, occorre monitorare costantemente il processo<br />
produttivo, gli ambienti di <strong>la</strong>voro, le attrezzature. Tutto questo diventa<br />
ancora più importante se si considera che possono verificarsi<br />
pericolosi fenomeni di contam<strong>in</strong>azione crociata da glut<strong>in</strong>e. Così,<br />
estremizzando, può accadere che da un <strong>in</strong>grediente naturalmente<br />
privo di glut<strong>in</strong>e si ottenga un prodotto f<strong>in</strong>ito contam<strong>in</strong>ato.<br />
