Some of <strong>Liguria</strong>’s fish are<br />
particularly known and loved. The<br />
anchovies and the “cicciarelli” of<br />
Noli, the fishing village near<br />
Savona, have become prized Slow<br />
Food specialties. They can be<br />
enjoyed fried in batter—eaten<br />
whole with no wastage—or<br />
pickled, (after drying slightly, then<br />
frying, and then conserved with<br />
vinegar).<br />
A similar procedure is used for<br />
“zerri” or “zerli”, which are fished<br />
in the same waters, and are part<br />
of traditional <strong>Liguria</strong>n cuisine. In<br />
La Spezia since Roman times,<br />
seafood have been cultivated,<br />
thanks to the calm waters of its<br />
sea, rich in plankton. Excellent are<br />
the mussels—raw, fried, filled,<br />
with sauce, or in soup. Also worth<br />
trying are the “red shrimp” or the<br />
shrimp of Santa Margherita<br />
Ligure, whose intense red color,<br />
small size, and great taste have<br />
made them famous.<br />
Camogli, instead, holds one of the<br />
last tuna fisheries in Italy, where<br />
three “risings” (of the net) are<br />

liguri. Alla Spezia, fin<br />
dall’epoca romana, si pratica la<br />
coltivazione dei frutti di mare,<br />
grazie alla ricchezza di plancton e<br />
alla tranquillità delle acque. Sono<br />
ottime le cozze: crude, fritte, ripiene,<br />
nel sugo o nella zuppa. E<br />
sono da provare anche i “gamberi<br />
rossi” o gamberi di Santa Margherita<br />
Ligure, che hanno un colore<br />
rosso intenso, non sono di grandi<br />
dimensioni ma sono estremamente<br />
gustosi. A Camogli una delle ultime<br />
tonnare italiane garantisce<br />
tre “levate” al giorno. Non pesca<br />
solo tonni (ormai piuttosto rari)<br />
ma tutte le specie di pesci che si<br />
imbattono nella rete, come le sarde,<br />
le sardine, gli sgombri, le sarpe,<br />
le occhiate e qualche ricciola.<br />
Molto dinamica lungo tutta la costa<br />
è la flotta dei pescherecci liguri. I tipi<br />
di pesca praticati includono la pesca<br />
con reti per la cattura di acciughe<br />
e sardine, la pesca a strascico<br />
soprattutto per seppie, calamari e<br />
sogliole, le reti da posta per i naselli.<br />
Con il bolentino o il palamito si<br />
pescano le orate e, d’autunno, quando<br />
davanti alle coste liguri si con-<br />

bream, porgy (a type of bream),<br />
and some amberjack.<br />
The <strong>Liguria</strong>n fishing boat fleet is<br />
very dynamic along the whole of<br />
the coast. Fish are captured with<br />
nets (especially anchovies and<br />
sardines), dragnets (squid,<br />
cuttlefish, and sole), and fixed<br />
nets (hake).<br />
Bottom fishing or long-lining is<br />
used for bream, and in the<br />
autumn—when the predatory fish<br />
concentrate in their hunt for<br />
anchovies—trawling is also used.<br />
Though it may seem strange,<br />
<strong>Liguria</strong> does not have a great<br />
tradition for cooking fish.<br />
They fry them, and they grill<br />
them. In addition, restaurants<br />
offer slices or filet of fish served<br />
“alla ligure”, which means<br />
garnished with small, bitter<br />
Taggiasche olives, pine nuts,<br />
extravirgin olive oil, and<br />
Mediterranean herbs like salvia<br />
and rosemary.<br />
