TECHNOLOGY OF USE IN FOODS: For oil-based applications, a solution of the oleoresin in vegetable oil can be directly applied.<br />

For aqueous-based food products, water-dispersible forms are required. These are generally oil-inwater<br />

emulsions with the pigment dissolved in the oil phase and using a food-grade emulsifier such as<br />

polysorbate.<br />
