PROPERTIES AND APPEARANCE: Occurs in the bark and fruit of many plants (e.g. oak species, sumac). Yellowish-white or light-brown<br />

amorphous, bulky powder or flakes or spongy masses; faint characteristic odour with astringent taste.<br />

Gradually darkens on exposure to air and light. Decomposes at 210–215°C. Very soluble in water,<br />

alcohol, acetone; almost insoluble in benzene, chloroform, ether, petroleum ether, carbon disulphide,<br />

carbon tetrachloride<br />

TECHNOLOGY OF USE IN FOODS: Keep in tightly closed container and protected from light. 1 gram of additive will dissolve in the<br />

following: 0.35 ml of water; 1 ml of warm glycerol<br />

ANTAGONISTS: Incompatible with salts of heavy metals, alkaloids, gelatin, albumin, starch, oxidising substances<br />

(e.g. permanganates, chlorates), spirit nitrous ether, lime water
