FUNCTION IN FOODS: Normally used to acidify foods and as a flavouring agent.<br />

Used as a solvent for gums, resins, baked goods, fats and oils to carry flavourings and colouring<br />

agents<br />

TECHNOLOGY OF USE IN FOODS: Used as a pH-adjusting agent in amounts consistent with GMP. pKa = 4.74, therefore would normally<br />

be used at pH less than 4.7. pH of aqueous solutions 1.0M = 2.4; 0.1M = 2.9; 0.01M = 3.4<br />

FOOD SAFETY ISSUES: Acetic acid is not an additive that has been subject to great criticism over safety. FAO/WHO recognises<br />

that acetic acid is a normal constituent of foods and has set no limit on the daily acceptable intake for<br />

humans. As a concentrated solution it is caustic and can cause burns and is a severe eye and skin<br />

irritant<br />
