TECHNOLOGY OF USE IN FOODS: Usage level: 0.5% max.; 0.1% max. in food; 0.1% (in distilling materials). Most effective in acid foods.<br />

Effective versus yeasts and moulds, food-poisoning bacteria, spore-forming bacteria. Not effective<br />

against many spoilage bacteria. pKa is 4.2, so should be used in foods with pH less than 4.2. Levels for<br />
