PROPERTIES AND APPEARANCE: Monosodium salt of L-form of glutamic acid. White or almost-white crystals or powder; free-flowing<br />

cystals or crystalline powder; forms rhombic prisms when crystallised from water. Below -8°C will<br />

recrystallise as a pentahydrate which after filtration and exposure to air will lose water of<br />

crystallisation and become the monohydrate. Slight peptone-like odour; meat-like taste. Very soluble in<br />

water; slightly soluble in alcohol.<br />

PURITY %: Not less than 99.0% of C 5H8NNaO4 H2O<br />

SOLUBILITY % AT VARIOUS TEMPERATURE/pH COMBINATIONS:<br />
