1. GROUP PROJECT<br />

Develop and Implement EMS in a hospitality business<br />

Ask hotels and restaurants in the region if they would be interested in having a<br />

group of students develop an EMS for their business. This will provide a hands-on<br />

practical project for several groups of students (5 to 6 students per group), and<br />

help local businesses improve environment performance.<br />

The first group of students would visit the property, interview the management<br />

and employees, and:<br />

• Conduct a preliminary environment review (including research on level<br />

of compliance, fines and charges, costs of resource use and waste<br />

disposal);<br />

• Analyse the findings of the review;<br />

• Develop an environment policy;<br />

• Establish environment objectives and targets;<br />

• Develop a baseline environment management programme.<br />

A group of students from the next semester could:<br />

• Help the business finalise the environment management programme<br />

• Implement the programme;<br />

• Set up regular performance monitoring practices;<br />

• Analyse environment progress.<br />

A group of students from the semester after that could:<br />

• Carry out an environment audit;<br />

• Assess the findings of the audit;<br />

• Make recommendations on further improvements, revise targets and<br />

objects for continual improvement;<br />

• Investigate how to maintain enthusiasm about the environment within<br />

the business.<br />

2. GROUP PROJECT<br />

Develop an EMS training programme for the management and employees of a<br />

small hotel or restaurant in the region. The exercise should involve site visits,<br />

a short preliminary environment review and interviews with management and<br />

employees. Make a presentation describing the programme. (Managers of the<br />

hotel/restaurant could be present during the presentation).<br />

3. GROUP DISCUSSION OR GROUP PROJECT<br />

Consider the environment management concepts and tools, cleaner production,<br />

eco-efficiency, industrial ecology, and life-cycle analysis. Devise examples of<br />

the application of each of these concepts in a hospitality business. Make a<br />

presentation of your examples.
