Danish products. There are big variati<strong>on</strong>s in <str<strong>on</strong>g>the</str<strong>on</strong>g> calculated numerical<br />
values, <strong>and</strong>, in practice, <str<strong>on</strong>g>the</str<strong>on</strong>g> total intake is believed to range between a<br />
very low intake <strong>and</strong> about 600 microgrammes per day. Since most of<br />
<str<strong>on</strong>g>the</str<strong>on</strong>g> pesticide residues in citrus fruits are in <str<strong>on</strong>g>the</str<strong>on</strong>g> peel, which is not<br />
eaten, <str<strong>on</strong>g>the</str<strong>on</strong>g> actual daily intake of pesticides is less than 200<br />
microgrammes per day. In this estimate, <str<strong>on</strong>g>the</str<strong>on</strong>g> intake via Danish<br />
products would be more than 50% of <str<strong>on</strong>g>the</str<strong>on</strong>g> total intake.<br />
• The average intake at single-substance level <str<strong>on</strong>g>from</str<strong>on</strong>g> food products is<br />
typically around 1% or less of <str<strong>on</strong>g>the</str<strong>on</strong>g> present Acceptable Daily Intake<br />
(<str<strong>on</strong>g>the</str<strong>on</strong>g> ADI value).<br />
• It cannot be proven <strong>on</strong> <str<strong>on</strong>g>the</str<strong>on</strong>g> basis of epidemiological studies that<br />
pesticides, in <str<strong>on</strong>g>the</str<strong>on</strong>g> quantities to which <str<strong>on</strong>g>the</str<strong>on</strong>g> general populati<strong>on</strong> is<br />
exposed, for example, via diet, are harmful to <strong>health</strong>. C<strong>on</strong>versely, <strong>on</strong>e<br />
can never completely prove scientifically that a pesticide cannot cause<br />
a <strong>health</strong> risk. One can, however, show, with greater or lesser<br />
(un)certainty, <str<strong>on</strong>g>the</str<strong>on</strong>g> probability or lack of probability of a <strong>health</strong> risk.<br />
This applies to all scientific work, including tests carried out <strong>on</strong><br />
animals. Fur<str<strong>on</strong>g>the</str<strong>on</strong>g>rmore, every statement about safety in c<strong>on</strong>necti<strong>on</strong> with<br />
<str<strong>on</strong>g>the</str<strong>on</strong>g> use of chemical substances is based <strong>on</strong> <str<strong>on</strong>g>the</str<strong>on</strong>g> existing body of<br />
knowledge, so <str<strong>on</strong>g>the</str<strong>on</strong>g>re is always <str<strong>on</strong>g>the</str<strong>on</strong>g> possibility of later findings with<br />
now unforeseeable effects.<br />
• Epidemiological studies of effects of metabolites <strong>and</strong> inert substances,<br />
which often make up a large part of <str<strong>on</strong>g>the</str<strong>on</strong>g> products, are largely n<strong>on</strong>existent.<br />
6.4.1 The sub-committee’s recommendati<strong>on</strong>s<br />
• In both c<strong>on</strong>venti<strong>on</strong>al <strong>and</strong> organic farming, farmers <strong>and</strong> workers are<br />
unaccustomed to thinking about <strong>health</strong> <strong>and</strong> safety, <strong>and</strong> not all injuries<br />
are reported despite <str<strong>on</strong>g>the</str<strong>on</strong>g> fact that <str<strong>on</strong>g>the</str<strong>on</strong>g>re are many serious accidents in<br />
farming <strong>and</strong> more fatal accidents than in any o<str<strong>on</strong>g>the</str<strong>on</strong>g>r occupati<strong>on</strong>. The<br />
sub-committee recommends that <strong>health</strong> <strong>and</strong> safety be given greater<br />
priority in both c<strong>on</strong>venti<strong>on</strong>al <strong>and</strong> organic farming.<br />
• The sub-committee finds that too little is known about <str<strong>on</strong>g>the</str<strong>on</strong>g> ability of<br />
pesticides <strong>and</strong> <str<strong>on</strong>g>the</str<strong>on</strong>g>ir coformulants to produce allergies <strong>and</strong> about <str<strong>on</strong>g>the</str<strong>on</strong>g>ir<br />
effect <strong>on</strong> <str<strong>on</strong>g>the</str<strong>on</strong>g> immune system.<br />
• As a c<strong>on</strong>sequence of <str<strong>on</strong>g>the</str<strong>on</strong>g> intensive use of pesticides in nurseries <strong>and</strong><br />
<str<strong>on</strong>g>the</str<strong>on</strong>g> producti<strong>on</strong> of fruit, vegetables <strong>and</strong> berries, <str<strong>on</strong>g>the</str<strong>on</strong>g> sub-committee<br />
recommends intensified acti<strong>on</strong> to reduce exposure to pesticides.<br />
• More extensive use of biomarkers for exposure to <strong>and</strong> <str<strong>on</strong>g>the</str<strong>on</strong>g> effects of<br />
pesticides would make it easier to dem<strong>on</strong>strate a relati<strong>on</strong>ship<br />
epidemiologically.<br />
• The discovery of new effects that have not previously been studied or<br />
paid much attenti<strong>on</strong>, such as effects <strong>on</strong> <str<strong>on</strong>g>the</str<strong>on</strong>g> endocrine system<br />
(horm<strong>on</strong>es) <strong>and</strong> <str<strong>on</strong>g>the</str<strong>on</strong>g> nervous system during development shows <str<strong>on</strong>g>the</str<strong>on</strong>g><br />
importance of c<strong>on</strong>stant research in <str<strong>on</strong>g>the</str<strong>on</strong>g>se areas.
