ut preliminary studies indicate that particularly <str<strong>on</strong>g>the</str<strong>on</strong>g> broad-spectrum<br />

antibiotics have serious effects <strong>on</strong> microorganisms, whereas <str<strong>on</strong>g>the</str<strong>on</strong>g> effects<br />

<strong>on</strong> soil arthropods are relatively limited. Seen in relati<strong>on</strong> to pesticides,<br />

veterinary pharmaceuticals <strong>and</strong> growth promoters c<strong>on</strong>stitute a potential<br />

risk of development of resistance in microorganisms, making treatment<br />

of infecti<strong>on</strong>s in domestic animals <strong>and</strong> humans difficult. As far as <str<strong>on</strong>g>the</str<strong>on</strong>g><br />

effects in <str<strong>on</strong>g>the</str<strong>on</strong>g> envir<strong>on</strong>ment are c<strong>on</strong>cerned, veterinary pharmaceuticals <strong>and</strong><br />

growth promoters probably c<strong>on</strong>stitute less of a risk than pesticides.<br />

However, <str<strong>on</strong>g>the</str<strong>on</strong>g>re is a lack of studies of <str<strong>on</strong>g>the</str<strong>on</strong>g>se matters - particularly of <str<strong>on</strong>g>the</str<strong>on</strong>g><br />

risk of polluti<strong>on</strong> of <str<strong>on</strong>g>the</str<strong>on</strong>g> groundwater.<br />

7.2.2 Chemical substances in food products<br />

Besides pesticide residues, food products c<strong>on</strong>tain a large number of<br />

c<strong>on</strong>taminants <strong>and</strong> chemical substances, partly anthropogenous <strong>and</strong> partly<br />

of natural origin. In <str<strong>on</strong>g>the</str<strong>on</strong>g> Government’s report <strong>on</strong> food safety, <str<strong>on</strong>g>the</str<strong>on</strong>g>se food<br />

comp<strong>on</strong>ents are systematically reviewed (Danish Government 1998).<br />

There follows a comparative analysis of <str<strong>on</strong>g>the</str<strong>on</strong>g> <strong>health</strong> c<strong>on</strong>sequences of<br />

pesticide residues in food products.<br />

Many factors affect food safety. They include:<br />

• naturally occurring toxic substances, e.g. algal toxins in mussels<br />

• residues <str<strong>on</strong>g>from</str<strong>on</strong>g> medical treatment of animals, e.g., antibiotics<br />

• c<strong>on</strong>taminants <str<strong>on</strong>g>from</str<strong>on</strong>g> <str<strong>on</strong>g>the</str<strong>on</strong>g> envir<strong>on</strong>ment, e.g. dioxins<br />

• pesticide residues, e.g. <str<strong>on</strong>g>from</str<strong>on</strong>g> weed c<strong>on</strong>trol<br />

• additives <strong>and</strong> aromatics added intenti<strong>on</strong>ally to improve, for example,<br />

colour, taste <strong>and</strong> shelf-life<br />

• migrati<strong>on</strong> <str<strong>on</strong>g>from</str<strong>on</strong>g> packaging<br />

• chemical compounds formed during preparati<strong>on</strong>, e.g. fried food<br />

mutagens.<br />

Table 7.1 lists <str<strong>on</strong>g>the</str<strong>on</strong>g> <strong>health</strong> effects of <str<strong>on</strong>g>the</str<strong>on</strong>g> different c<strong>on</strong>taminants of food<br />

products. The cause of <strong>health</strong> effects is shown, toge<str<strong>on</strong>g>the</str<strong>on</strong>g>r with an<br />

assessment of <str<strong>on</strong>g>the</str<strong>on</strong>g> risk to humans given as <str<strong>on</strong>g>the</str<strong>on</strong>g> number of deaths or cases<br />

of pois<strong>on</strong>ing per year or a safety margin between <str<strong>on</strong>g>the</str<strong>on</strong>g> actual exposure <strong>and</strong><br />

NOAEL. The table shows that residues of <str<strong>on</strong>g>the</str<strong>on</strong>g> (individual) present<br />

pesticides have a large safety margin of 1000. They are thus less<br />

dangerous than <str<strong>on</strong>g>the</str<strong>on</strong>g> old, persistent chlorinated pesticides, which have a<br />

safety margin of 10-500, depending <strong>on</strong> <str<strong>on</strong>g>the</str<strong>on</strong>g> individual substance. The<br />

heavy metals lead, cadmium <strong>and</strong> mercury are far more dangerous to<br />

humans that pesticide residues, having a safety margin of <strong>on</strong>ly 2-10. It is<br />

at <str<strong>on</strong>g>the</str<strong>on</strong>g> same time thought that toxic c<strong>on</strong>stituents in food plants, such as<br />

glycoalkaloids in potatoes <strong>and</strong> tomatoes, lectins in dried beans, prussic<br />

acid glycosides in apricot kernels, bamboo shoots <strong>and</strong> flax seed, toge<str<strong>on</strong>g>the</str<strong>on</strong>g>r<br />

with phenylhydrazines in mushrooms, c<strong>on</strong>stitute a greater risk than<br />

pesticide residues. There is growing interest in <str<strong>on</strong>g>the</str<strong>on</strong>g>se toxic substances<br />

because <str<strong>on</strong>g>the</str<strong>on</strong>g>ir c<strong>on</strong>tent in food plants can be inadvertently increased by<br />

genetic modificati<strong>on</strong>. Special attenti<strong>on</strong> is being paid to this in <str<strong>on</strong>g>the</str<strong>on</strong>g> risk<br />

analysis of genetically modified plants. Lastly, <str<strong>on</strong>g>the</str<strong>on</strong>g>re is nitrate, which is<br />

deemed to be a bigger problem in drinking water than pesticide residues<br />

in <str<strong>on</strong>g>the</str<strong>on</strong>g> current c<strong>on</strong>centrati<strong>on</strong>s.<br />
