(NAVMED P-5010, Article 1-6).<br />

e. Equipment operating and safety instructions prominently posted on or<br />

conspicuously near the equipment to which it relates (OPNAVINST<br />

5100.19, Section V).<br />

f. Steam and hot water lines properly lagged and sheathed<br />

(OPNAVINST 5100.19, Enclosure (1), Section III).<br />

g. Furniture installed in prescribed arrangement and neat, clean and in<br />

usable condition (OPNAVINST 4700.29)<br />

h. Racks and bins installed in storerooms.<br />

2. Equipment<br />

a. Deck mounted equipment sealed to the deck or elevated on legs that<br />

provide at least 8 inches of clearance between the deck and equipment<br />

(NAVMED P-5010, Article 1-8).<br />

b. Decks in food service areas maintained in good repair (NAVMED<br />

P-5010, Article 1-15).<br />

c. All equipment accessible.<br />

d. Food contact surfaces made of smooth, corrosion resistant, non-toxic<br />

(FDA Food, Drug and Cosmetic Act guidelines), stable non-absorbent<br />

materials that will not impart odors, color or taste, nor contribute to<br />

adulteration of food (NAVMED P-5010, Article 1-8 (3)).<br />
