b. Ice scoop, stored handle up, in a covered and freely draining bracket<br />

outside ice storage compartment or inside the ice machine on a<br />

bracket above the highest level of the ice (NAVMED P-5010,<br />

Article 1-36).<br />

9. Manual Dishwashing<br />

a. Utensils move from dirty to clean side of wash area without risk of<br />

cross contamination by handling or splashing.<br />

b. A three compartment sink installed for washing pots, pans and<br />

utensils.<br />

c. Booster heater installed and functional.<br />

d. Temperature gage installed or thermometer used to monitor wash and<br />

rinse temperatures.<br />

e. Wash water temperature ranges between 95-125°F.<br />

f. Final rinse water temperature reaches at least 170°F.<br />

g. Long-handled dip baskets available.<br />

10. Dishwashing Machine<br />

a. Center and end curtains installed.<br />

b. Temperature gages accurate to +/- 3°F.<br />

c. Multiple tank conveyor dishwashing machine meets following<br />

requirements (NAVMED P-5010, Article 1-9):<br />

(1) Wash temperature 150-160°F for 7 seconds.<br />

(2) Rinse temperature 160-180°F for 7 seconds.<br />

(3) Final rinse temperature 180-195°F with a conveyor speed of<br />

15 feet per minute at 15 - 25 psi or as specified in the machine<br />

technical manual.<br />
