<strong>Fresh</strong> or Frozen Corn Smut Galls <strong>Import</strong>ed for Consumption<br />

Corn smut galls 2 (the fruiting bodies of Ustilago maydis) are imported <strong>and</strong><br />

eaten like mushrooms. The galls may be naked or attached to parts of the corn<br />

plant. Follow these special procedures for taking regulatory action on fresh or<br />

frozen corn smut galls imported for consumption.<br />

1 The sclerotia of horse's tooth ergot (Claviceps gigantea) are white to grayish-brown <strong>and</strong> comma-shaped, resembling a horse's<br />

tooth (hence their Spanish name, diente de caballo). The sclerotia are on the ear, replacing the corn kernels. There may be<br />

one to several sclerotia per ear.<br />

2 The galls of corn smut (Ustilago maydis) are tumorlike <strong>and</strong> are covered with glistening, greenish to<br />

silvery-white tissue. The galls may be found on any above ground part.<br />
