u xiv e siècle, Jeanne de Bourgogne raffolait de gâteaux<br />
en forme de demi-lune. Mais le croissant ne serait<br />
apparu qu’en 1683, lors du siège de Vienne par les<br />
Ottomans. Les boulangers de la ville auraient sonné<br />
l’alerte pour parer l’attaque nocturne, et cela leur aurait<br />
inspiré l’idée d’une viennoiserie moquant le symbole du<br />
drapeau ennemi. Longtemps brioché, le croissant s’enrobe<br />
de pâte feuilletée en France, à la fin du xix e siècle. Dans<br />
sa version au beurre, il a perdu sa forme, mais pas son<br />
croustillant ni son goût. Ultime variante, le « cronut »,<br />
le croissant-donut du pâtissier beauvaisien Dominique<br />
Ansel, régale New York depuis 2013. ◆<br />
The croissant first appeared in 1683, when Vienna was<br />
besieged by the Ottomans and city bakers sounded the<br />
alarm to ward off a night attack. The crescent-shaped<br />
pastry was their way of mocking the enemy flag. In France<br />
in the 19th century, the initial croissant, made of brioche,<br />
transformed into a buttery version that lost some form,<br />
but not its flakiness and flavor. The “cronut,” Dominique<br />
Ansel’s croissant-donut, has delighted New Yorkers<br />
