La mia generazione, da quel punto di vista, non<br />
è stata fortunata: si è persa il boom proteico<br />
del Dopoguerra, esaltato dalle ricette delle<br />
nonne, e oggi che ha un po’ di pancetta e le<br />
arterie otturate non può godersi fino in fondo<br />
il ritorno al cibo buono, pulito e giusto.<br />
All’epoca le nostre mamme avevano cominciato<br />
a lavorare in massa, sostituite in cucina da<br />
freezer e lavastoviglie, e la cena a base di filetti<br />
di sogliola limanda non era la Sacra Rappresentazione<br />
che si celebra oggi, con l’ausilio<br />
di Sagrantini e Morellini.<br />
La frutta era frutta, buona devo dire, e non ci<br />
chiedevamo se era “chilometro zero” o se era<br />
dovuta arrivare fin dal Trentino, mettendo a rischio<br />
l’ecosistema. Mangiare serviva a sopravvivere,<br />
non a intrattenersi per ore né a cambiare<br />
i destini del mondo.<br />
Tutto questo potrebbe già spiegare perché il<br />
mio alter ego è un commissario di polizia anoressico,<br />
che non vuole (o non può) mangiare<br />
dolci, pane, pasta, uova, parmigiano e moltoaltro.<br />
Per lui i piaceri della carne sono solo<br />

il cibo non ha mai avuto un’enorme<br />
importanza. I capisaldi della mia<br />
