Perché il pesto è la seconda salsa più usata al mondo<br />
per il condimento della pasta. E’ anche “democratico”,<br />
nel senso che ognuno a casa propria lo prepara come<br />
preferisce (c’è chi mette più aglio e chi un po’ meno,<br />
chi aggiunge il pecorino sardo e chi no) ma più diventa<br />
“global” e meno ci si ricorda dei fondamenti “local”.<br />
Molti sono consapevoli che uno degli ingredienti principali<br />
del pesto è il basilico, ma non tutti inorridiscono<br />
di fronte a quei barattolini di colore rosso che qualsiasi<br />
supermercato californiano vende con sopra la<br />
scritta “pesto genovese”. Ogni paese del mondo per<br />
cultura e tradizione ha avuto a che fare con mortai e<br />
pestelli ma non sempre si sa che gli strumenti tradizionali<br />
per preparare il pesto genovese sono proprio il<br />
mortaio di marmo e il pestello di legno. È qui che arriva<br />
il Campionato Mondiale di Pesto Genovese al<br />
Mortaio con le sue gare eliminatorie in giro per i cinque<br />
continenti. 10 concorrenti muniti di mortai, pestelli<br />
e di tutti gli ingredienti “giusti” (rigorosamente<br />
spediti dall’Italia) si sfidano nella preparazione del pesto,<br />
il vincitore partecipa alla finale mondiale di Genova.<br />
L’esperimento, a oltre 5 anni dalla sua ideazione<br />
(il Primo Campionato risale al 2007), funziona e anche<br />
piuttosto bene. Decine e decine di mortai sono stati<br />
spediti in tutto il mondo, la Camera di Commercio di<br />
Massa Carrara segnala da qualche anno un aumento<br />
annuo del 25% nella vendita dei mortai. E pensare che<br />
era considerato un mercato stagnante.<br />

pesto originated in <strong>Liguria</strong>. Most people are aware that<br />
one of the main ingredients of pesto is basil, but not<br />
everyone is horrified by those bottles of red paste that<br />
Californian supermarkets sell with the label claiming it to<br />
be “Genoese pesto”. Each country in the world, culturally<br />
or traditionally, has come in contact with mortars and<br />
pestles, but it is not always known that the traditional<br />
instrument for making Genoese pesto is precisely this, the<br />
marble mortar and the wood pestle. This is where the<br />
World Championships for Genoese Mortar-made Pesto<br />
comes in, with its elimination rounds on all six continents.<br />
10 competitors, armed with mortars, pestles, and all the<br />
right ingredients challenge each other in the preparation<br />
of pesto. The winners will participate in the world finals in<br />
Genoa. The experiment, five years after its creation, works,<br />
and actually works quite well. Dozens and dozens of<br />
mortars are sent around the world.<br />
