gelatai fantasiosi. Chi preferisce la campagna e<br />
una certa semplicità, si addentrerà nell’entroterra<br />
di San Bartolomeo alla ricerca di Poiolo, il borgo<br />
dove si trova l’osteria I Secoli Bui, specializzata in<br />
cucina dei prodotti del suolo piuttosto che quelli<br />
del mare.<br />
Abbiamo quasi fatto notte: Alassio o Sanremo?<br />
Due mete chic. Alcune scelte le suggerisce Marco<br />
Vallarino, nella guida qui accanto. Comunque la<br />
notte di Alassio è AlPorto che, per la verità, si impegna<br />
a soddisfare ogni esigenza: dal ristorante<br />
raffinato alla discoteca. Da segnalare invece nel<br />
paese della canzone e delle celebrità del mondo -<br />
testimoni le firme sulle piastrelle colorate del muretto<br />
di fronte al Caffè Roma - un paio di locali<br />
interessanti: Movida e Papei da Turta.<br />
Ultimo, perché fondamentale, l’estremo ponente<br />
di colori, odori e sapori ancora speciali. Shopping<br />
e visita alla Fattoria didattica dell’Olio Roi di Rossella<br />
e Franco Boeri a Badalucco, poco sopra Arma<br />
di Taggia. L’azienda esporta olio ligure in 18 Nazioni<br />
e Franco Boeri è responsabile del settore olio<br />
di Eataly, curatore del presidio Slow Food “Olio<br />
d’Argan Marocco”, assaggiatore d’olio e cofondatore<br />
del “Consorzio Olio DOP Ligure”. Roi è una tappa<br />
obbligata e Badalucco anche per i fagioli bianchi<br />
celebri nel mondo - insieme a quelli di Conio e<br />
di Pigna - oltre che per il trattamento assolutamente<br />
ligure di un alimento importato da lontano:<br />
lo stoccafisso, che ha salvato la povera gente dall’astinenza<br />
completa sancita dal Concilio di Trento<br />
che prescrisse pesce o digiuno il venerdì.<br />
C’è tradizione e tradizione: ora toccherà scegliere tra<br />
slow e fast food, ma all’insegna dell’osservanza più<br />
rigorosa. Slow di rango: Paolo e Barbara a Sanremo,<br />
Baia Benjamin e Balzi Rossi a Ventimiglia; La<br />
conchiglia a Arma di Taggia. Ottimi ristoranti<br />
di stretta osservanza o con contaminazione<br />
contemporanea: Olio colto<br />
a Taggia, La Pignese a Sanremo, Il<br />
torrione e Giappun a Vallecrosia.<br />
Per finire il fast food: i posti delle diverse<br />
torte salate liguri per la merenda<br />
mordi e fuggi o il pranzo di corsa.<br />
A Imperia c’è l’Antica<br />

Just a bit farther, always on foot, the ice cream at<br />
Sharbé, by Gaetanina Cesarano, is the best in the<br />
area, and, if it is true that it was invented by the<br />
Egyptions, they say this because the cone, in the true<br />
sense of the wrapper that ends in a point, was born at<br />
Ceriana in the beginnings of the last century thank to<br />
a family of imaginative gelato-makers. For he who<br />
prefers the countryside and a certain simplicity, set<br />
foot in the hinterlands around San Bartolomeo and<br />
seek Poiolo, the village of the “Dark Ages Tavern”,<br />
Osteria I secoli bui, specializing in the cuisine of pork<br />
rather than sea products.<br />
Since it is almost night, Alassio or Sanremo? Two chic<br />
destinations. Some choices are offered by Marco<br />
Vallarino, in the guide that follows. In any case, the<br />
night in must be spent in AlPorto which, to tell the<br />
truth, pledges to satisfy every need, from the refined<br />
restaurant to the discothèque. We would like to point<br />
out, in any case, in the land of song and celebrities –<br />
testified by their famous signatures fired into the<br />
colored tiles in front of Caffè Roma – a pair of<br />
interesting places: Movida and Papei da Turta.<br />
Last but definitely not least, the western end of <strong>Liguria</strong><br />
is full of colors, odors, and still special flavors. Shopping<br />
mixes with visits to the educational olive oil factory,<br />
Olio Roi by Rossella and Franco Boeri in Badalucco, just<br />
above Arma di Taggia. The company exports <strong>Liguria</strong>n<br />
olive oil to 18 countries, and Franco Boeri is the Olive Oil<br />
Head at Eataly, as well as the curator for Slow Food’s<br />
“Olio d’Argan Marocco”, and oil-taster and co-founder<br />
of the consortium, “Consorzio Olio DOP Ligure”. Roi is an<br />
obligatory stop, and the town of Badalucco is also<br />
internationally famous for its white string beans – along<br />
with those of Conio and Pigna – in addition to its<br />
absolutely <strong>Liguria</strong>n treatment of a food that comes from<br />
afar: stoccafisso, or dried salted cod, completely<br />
sanctified by the Church’s Council of Trento which<br />
obliged the poor to either eat fish or fast on Fridays.<br />
There is tradition, and there is tradition. Today one<br />
must choose between slow and fast food, but while<br />
seeking to observe the most rigorous of the two, high<br />
ranking slow: Paolo and Barbara in Sanremo, Baia<br />
Benjamin and Balzi Rossi in Ventimiglia; La conchiglia<br />
in Arma di Taggia. Excellent restaurants, strict<br />
observers or with contemporary contamination: Olio<br />
colto in Taggia, La Pignese in Sanremo; Il torrione<br />
and Giappun in Vallecrosia.<br />
To conclude, fast food: the places to buy salty pies for<br />
snacks and lunches eaten on the run. In Imperia there is<br />
Antica sciamadda (“the ancient flames”) offering chick<br />
pea flour farinata pancakes, pizza all’Andrea; in Sanremo<br />
farinata can be found at the Cantine sanremesi or the<br />
Tavernetta, the vegetable pies at Maggiorino or at<br />
Gianna, focaccia in the bakery bar Bruni.
