Una posizione da urlo, quasi a picco<br />
sul mare, con l’isola di Bergeggi che fa<br />
da romantico sfondo. Sopra le terrazze<br />
che danno il nome al ristorante, le<br />
poche camere dell’omonimo hotel di<br />
charme sagomato sulla roccia. Claudio<br />
Pasquarelli ne è il titolare e l’artefice,<br />
anche se oggi preferisce lasciare la<br />
luce dei riflettori ai figli Christian, che<br />
si occupa della sala e dei vini, e Sara,<br />
“padrona” della cucina. Fino a qualche<br />
anno fa Claudio garantiva la<br />
freschezza del pesce affidandosi, come<br />
unico cliente, a un pescatore locale.<br />
Ora è andato più in là: va alla ricerca<br />
del pesce migliore, da dovunque<br />
provenga, perché la facilità nei<br />
collegamenti garantisce<br />
l’indispensabile freschezza. Così il<br />
menù crudo di Lara non è un azzardo,<br />
ma un’assoluta prelibatezza con tutte<br />
le garanzie. Così come lo sono la zuppa<br />
di pesce sfilettato e cotto sulla pietra<br />
ollare, il bouquet di crostacei con<br />
agrumi mediterranei , il “frittino” del<br />
Golfo.<br />
In a position that brooks no equal –<br />
the rim of a cliff on the sea with the<br />
Island of Bergeggi in the romantic<br />
background, lies the hotel/restaurant<br />
that belongs to Claudio Pasquarelli.<br />
Above the terraces that lend their<br />
name to the restaurant, a few rooms<br />
of the charming hotel called, At<br />
Claudio’s, seem carved out of the rock.<br />
The idea was Claudio’s, though he now<br />
prefers to let the spotlight settle on his<br />
son, Christian, who is takes care of the<br />
dining and the wines, and Sara, the<br />
“boss” of the kitchen. In years past, in<br />
autumn, they would close the hotel<br />
and restaurant to transfer their<br />
activity to the Caribbean, where they<br />
have a luxury establishment. But today<br />
Claudio and his team prefer to<br />
concentrate on that which they have<br />
built at home. The restaurant, and the<br />
hotel in Bergeggi, were created bit by<br />
bit, a dream that became reality. And<br />
above all they continue to research<br />
food, which causes them to<br />
experiment constantly, proposing an<br />
ever more refined cuisine. An example:<br />
until just a few years ago, Claudio<br />
would guarantee his fresh fish by<br />
trusting, as his only supplier, a local<br />
fisherman. Now he has gone further.<br />
He seeks out the best fish, no matter<br />
where it comes from, as long as it has<br />
“indispensable” freshness. This makes<br />
his raw Lara Menu a delight that also<br />
offers all guarantees. As does his soup<br />
of filet fish cooked on a heated stone,<br />
his crustaceans with Mediterranean<br />
citrus fruit, his fried “frittino del<br />
Golfo”, with everything from bread to<br />
desserts made in-house.<br />

L’attuale ristorante nasce ai primi del<br />
Novecento come bar-pasticceria; lì,<br />
nel 1913 viene fondato il Vado<br />
Football Club, la squadra di Felice<br />
Levratto, che, nel 1922, vinse la prima<br />
Coppa Italia. Negli anni Settanta,<br />
come pizzeria è punto di ritrovo per i<br />
giovani; in precedenza era stato<br />
covo di artisti (dalle avanguardie<br />
futuriste ad Arturo Martini) che<br />
contagiarono l’allora<br />
proprietario Lidio Lovisolo, i<br />
cui figli e nipoti portano<br />
oggi avanti l’attività. I<br />
piatti principali sono a<br />
base di pesce: dagli<br />
spaghetti alle acciughe<br />
fresche, ai totani alla<br />
piastra, al pescato che fa<br />
bella mostra di sé al centro del<br />
ristorante. Ma non mancano, nel<br />
rispetto di una tradizione ligure e<br />
personale, le trofie al pesto, la<br />
farinata e la mitica pizza, riproposta<br />
spessa e a grandi pezzi quadrati.<br />
Giusto come quarant’anni fa.<br />
The present-day restaurant was born<br />
in the early 1900s as a bar-pastry<br />
shop. It was here, in 1913, that the<br />
Vado Football Club, was founded, the<br />
team of Felice Levratto, which, in<br />
1922, won the first Coppa Italia. In the<br />
seventies, it was turned into a pizzeria,<br />
and was well loved by young people. It<br />
was also the gathering place for artists<br />
(from avant-garde futurists to Arturo<br />
Martini) who had their effect on the<br />
owner at the time, Lidio Lovisolo,<br />
whose children and grandchildren now<br />
continue the restaurant activity. The<br />
main dishes are based on fish: from<br />
spaghetti to fresh anchovies, from<br />
grilled baby octopus to the daily catch<br />
which makes its own display at the<br />
center of the restaurant. But you will<br />
also find respect for personal and<br />
<strong>Liguria</strong>n tradition in its ttrrooffiiee aall<br />
ppeessttoo, farinata, and pizza, great thick<br />
squares of it. Just like forty years ago.<br />

saputo legare bene la teoria con la<br />
pratica. Per anni la sua cucina è stata<br />
straordinario testimonial gastronomico<br />
dell’Italia in competizioni sportive<br />
mondiali, il cuore di Club Italia o Casa<br />
azzurri. Da qualche anno nella stessa<br />
struttura di uno storico ristorante di<br />
Albissola, Gianni ai pescatori, ha dato<br />
vita al suo Acquapazza, dove propone<br />
piatti tipici nei quali è importante la<br />
cultura Slow Food con la riproposta di<br />
cibi basati sui presidi presenti sul<br />
territorio (dall’aglio di Vessalico agli<br />
asparagi violetti, a tutti gli altri<br />
