scuola italiana di panificazione.<br />
Propone corsi di vario livello, da quelli<br />
che “laureano” fornaio con qualifica<br />
professionale (600 ore), al ciclo rapido<br />
di lezioni con approfondimento<br />
storico-culturale (8 ore, 130 euro),<br />
aperte a tutti e dedicate di volta in<br />
volta alla focaccia genovese, la più<br />
gettonata, oppure al pandolce, alla<br />
pasticceria delle grandi e piccole<br />
occasioni, alla pasta fresca dai<br />
corzetti ai ravioli, passando per il<br />
pesto e le verdure dei ricettari<br />
genovesi.<br />
Una scuola-laboratorio, naturalmente<br />
con tanto di forno, lanciata da Iscot,<br />
ente di formazione di Ascom-<br />
Confcommercio, nell’ambito del<br />
proprio ventaglio di corsi<br />
professionali, in viale J. Monet (presso<br />
il mercato comunale di piazza<br />
Romagnosi). In generale l’istituto<br />
forma una media annua di circa 800<br />
persone, per un’attività globale che<br />
supera le 70mila ore di formazione.<br />
Per una letterale infarinatura, ci sono<br />
poi i seminari con degustazioni (due<br />
ore, 25 euro), su nicchie iper<br />

Genoa since 2009 holds the first<br />
Italian School of Bread. It offers<br />
courses at various levels, from those<br />
for graduates seeking professional<br />
qualifications (600 hours) to quick<br />
historical-cultural lessons which last 8<br />
hours (130 euros). The course are open<br />
to all and alternate specialties from<br />
the very popular course on Genoese<br />
focaccia, to pandolce (Genoese sweet<br />
bread) to pastries for occasions both<br />
big and small, and fresh pasta from<br />
corzetti to ravioli, pesto and Genoese<br />
vegetables.<br />
This school workshop, with, naturally,<br />
lots of ovens, was launched by Iscot,<br />
the training branch of Ascom-<br />
Confcommercio, under the aegis of its<br />
full range of professional courses, in<br />
Viale J. Monet (near the city market in<br />
Piazza Romagnosi). In general, the<br />
institute trains annually around 800<br />
people, with total activity surpassing<br />
70,000 hours of training.<br />
For a literal “sprinkling” of gourmet<br />
knowledge, there are seminaries with<br />
specifiche: il cibo di strada (dal<br />
cartoccio al finger food), la pasta<br />
ligure (picagge, corzetti, ravioli,<br />
pansoti), con un sempreverde, il pesto<br />
e le altre salse da mortaio.<br />
Gratuiti per alcune tipologie di utenti<br />
iscritti ai centri per l’impiego, perché<br />
finanziati dalla Provincia di Genova, i<br />
corsi di 30 ore (base o avanzati),<br />
spendibili sul mercato del lavoro,<br />
dedicati ad arte bianca, pane & pani<br />
di <strong>Liguria</strong>, tecniche di lavorazione del<br />
cioccolato. Ricominciano<br />
periodicamente, al raggiungimento di<br />
un tot di iscritti, salvo l’ultimo, solo<br />
invernale: “La temperatura deve<br />
essere inferiore ai 24 gradi – spiega<br />
Barbara Ercoli di Iscot – il cioccolato<br />
d’altronde non tollera l’aria<br />
condizionata”. Si apprendono tecniche<br />
per la realizzazione di soggetti<br />
scolpiti, pièces, pralineria ricoperta,<br />
serigrafia e decorazione, i processi di<br />
farcitura, l’abbinamento con pane,<br />
vini e spiriti, con degustazione e<br />
analisi sensoriale di cacao, granella e<br />
massa, per arrivare all’assaggio dei cru<br />
e dei blend d’autore. Mica pizza e<br />
fichi.<br />

(picagge, corzetti, ravioli, pansoti),<br />
with pesto and other sauces that<br />
derive from mortars (and therefore are<br />
not cooked). Some courses are free,<br />
because they are financed by the<br />
Province of Genoa: the 30 hours<br />
courses (base and advanced) for the<br />
work market, dedicated to what<br />
Italians call the “white art” (relating to<br />
flour) of <strong>Liguria</strong>, and chocolateworking<br />
techniques. They repeat<br />
periodically, once the number of<br />
registrations has been met, except for<br />
the chocolate course, which is only<br />
held in the winter. “Temperatures must<br />
be less than 24 degrees”, explains<br />
Barbara Ercoli of Iscot, “and good<br />
chocolate cannot be done in an air<br />
conditioned environment.” Techniques<br />
are taught for the making of<br />
sculptured pieces, pralines, designs<br />
and decoration, the filling process, the<br />
matching of the chocolate with bread,<br />
wine, and spirits, with sampling and<br />
analysis by taste of chocolate, grain,<br />
and mass, to reach the test-tasting of<br />
cru and of special blends. Much more<br />
than pizza and figs.<br />
