Una casa “ricamata” arroccata su<br />
una scogliera a picco sul mare, una<br />
terrazza e una veranda che ospita, in<br />
mezzo ai tavoli, un grande leccio. Sullo<br />
sfondo, il porticciolo di Camogli e il<br />
profilo mitico, almeno per me, di Punta<br />
Chiappa. In questo straordinario<br />
contesto naturale, il ristorante Rosa<br />
propone la sua cucina essenziale e<br />
rigorosa, strettamente legata alla<br />
tradizione e ai prodotti del territorio, in<br />
cui la semplicità si armonizza con la<br />
qualità e la freschezza assoluta delle<br />
materie prime, a cominciare dal<br />
pescato locale, del quale lo chef Gianni<br />
è un conoscitore insuperabile.<br />
Il menù, quindi, varia in conseguenza<br />
alle stagioni, ma per fortuna ho trovato<br />
nel corso di tutto l’anno i miei piatti<br />
preferiti: i mmaannddiillllii ddee ssaaeeaa al pesto, il<br />
risotto ai frutti di mare, il tonno in<br />
agrodolce, la torta di polpo.<br />

A terrace and a verandah that hosts,<br />
in the middle of the tables, a great<br />
holm oak. In the background, the<br />
harbor of Camogli and the legendary<br />
(at least for me) silhouette of<br />
Portofino mountain, ending in Punta<br />
Chiappa. In this extraordinary natural<br />
context, the restaurant Rosa proposes<br />
a cuisine that is essential and<br />
rigorously tied to tradition and the<br />
produce of its land. Here simplicity<br />
harmonizes with quality and the<br />
absolute freshness of prime<br />
ingredients, starting with local fish,<br />
for which, the chef, Gianni is an<br />
inimitable connoisseur.<br />
The menu therefore varies with the<br />
seasons, but fortunately I have always<br />
found my favorite dishes during the<br />
course of the year here: mmaannddiillllii ddee<br />
ssaaeeaa with pesto, risotto ai frutti di<br />
mare, sweet and sour tuna, and<br />
della natura, crea un’atmosfera<br />
speciale. Grazie alla sua regia, nel suo<br />
locale il cliente non solo viene<br />
conquistato dal sapore (che spesso<br />
riesce addirittura a distrarre<br />
dall’incanto del panorama), ma viene<br />
invitato a prendere parte a incontri<br />
culturali sempre stimolanti e originali,<br />
presentazioni di libri, reading, spettacoli<br />
teatrali, serate di degustazione di vino e<br />
di olio, mostre d’arte e fotografiche.<br />
E se dovesse capitarvi di aspettare gli<br />
amici prima di mettervi a tavola,<br />
potrete ingannare l’attesa sfogliando i<br />
migliori libri sul mare e la cultura ligure<br />
e gli album delle dediche dei tanti<br />
personaggi illustri che in 60 anni sono<br />
passati dalla Rosa.<br />

invited to take part in cultural<br />
encounters that are always<br />
stimulating and original, ranging from<br />
book presentations, theatrical<br />
offerings, wine and olive oil sampling<br />
evenings, and art and photography<br />
shows.<br />
