di garanzia esercitato negli anni dal Consorzio.<br />
Esiste, infatti, un preciso vincolo normativo: almeno<br />
il 66% delle olive che hanno prodotto olio<br />
dop, esaminate da una<br />
specifica camera di<br />
controllo, devono provenire<br />
da aziende consorziate.<br />
Oltre questa<br />
soglia, il Consorzio ottiene<br />
un decreto ministeriale<br />
che consente<br />
di vigilare sul mercato,<br />
in qualità di agente di<br />
pubblica sicurezza.<br />
«Preleviamo un campione<br />
d’olio – spiega<br />
Francesco Bruzzo, presidente<br />
della Commissione<br />
d’assaggio della<br />
Camera di Commercio<br />
di Genova – che viene<br />
sottoposto a una verifica<br />
incrociata chimica<br />
e organolettica da<br />
parte di otto, diversi,<br />
assaggiatori». Ma come<br />
facciamo a essere<br />
sicuri che l’olio presente sulle nostre tavole sia ligure<br />
al 100%? Si chiama criterio di tracciabilità<br />
e nasce dalla collaborazione tra Consorzio di Tutela<br />
ed Ente di Certificazione. In pratica, una<br />
semplice etichetta posta sul collo della bottiglia<br />
che indica azienda d’origine e luogo di imbottigliamento.<br />
«Negli anni è stata fatta un grande azione di<br />
controllo e promozione a livello nazionale, come<br />
è richiesto dalle norme europee – sottolinea<br />
Lazzaretti - Il passo successivo è restringere il<br />
campo all’area regionale, a distinguere e garantire<br />
sempre di più il prodotto locale, attraverso<br />
una vigilanza costante sulle contraffazioni e sul<br />
rispetto delle regole da parte dei consorziati, a<br />
tutto beneficio del consumatore». Un vero e proprio<br />
patto di filiera che garantisce l’intero percorso<br />
dell’olio, dall’olivicoltura all’imbottigliamento,<br />
alla vendita al dettaglio. «Fissiamo dei<br />
prezzi minimi – conclude Lazzaretti – e avvertiamo<br />
che, sotto una certa soglia, il prodotto non<br />
può essere acquistato. La <strong>Liguria</strong> è un lembo di<br />
terra stretto, sferzato da agenti atmosferici di<br />
ogni tipo e non meccanizzabile, dove storicamente<br />
si produce un olio tanto costoso quanto<br />
di altissima qualità»<br />
L'oliva taggiasca, tipica dell'imperiese, è una delle più<br />
rinomate per la produzione di olio extravergine<br />

More than 500 members adhere – olive growers,<br />
olive oil mills, oil-producers and bottlers – <strong>cover</strong>ing<br />
the whole of the Riviera from east to west. There<br />
are enough members to guarantee the continual<br />
quality control that the Consortium has insisted<br />
upon over the years.<br />
There is even a precise<br />
legal regulation that at<br />
least 66% of the olives<br />
that make D.O.P. olive<br />
oil must come from<br />
producers who are<br />
members of the<br />
Consorzio. In addition, it<br />
vigils over the market as<br />
per a law that has made<br />
it an agent for<br />
safeguarding the public.<br />
“We sample the oil,”<br />

undergoes a series of<br />
linked chemical and<br />
taste tests by eight<br />
different tasters.”<br />
But how can we be sure<br />
that the oil on our tables is 100% <strong>Liguria</strong>n olive oil?<br />
By “traceability”, the result of the collaboration<br />
between the safeguarding consortium and the<br />
entity that provides certification. In practice, just<br />
check the simple label on the neck of the bottle. It<br />
shows the producer and also the place it was<br />
bottled. “Over the years a great action of checks<br />
and promotion has taken place at national level, in<br />
accordance with European laws,” Lazzaretti explains.<br />
“Our next step is to restrict the field yet more, to<br />
guarantee that the product has an even larger<br />
percentage of local produce. We must do this by<br />
constant vigilance against any falsified origins,<br />
insisting on respect for the rules. All this is to great<br />
benefit for the consumer.”<br />
As a result a true production chain guarantees the<br />
entire route of the olive oil - from the olive groves<br />
to the bottling process to retail. “We set the<br />
minimum price,” says Lazzaretti, “warning that<br />
under a certain price the product cannot be bought.<br />
<strong>Liguria</strong> is a thin strip of land between the<br />
mountains and the sea. We are subject to weather<br />
conditions that cannot be controlled. Our land<br />
cannot be mechanized. Here we have historically<br />
produced an olive oil that is expensive, but of the<br />
highest of quality.”
