Il paesino di Ellera è nell’entroterra di<br />
Albisola Superiore, a cinque chilometri<br />
dal mare. Di buoni ristoranti che<br />
propongono cucina ligure non ce n’è<br />
uno solo ma tre. Il Molino (il termine,<br />
spiega il proprietario Giovanni<br />
Rossello, viene da mola, mentre si<br />
chiamano mulini quelli a vento, in<br />
quanto mulinano le pale) è quello in<br />
centro al paese, appena oltre il ponte<br />
sul torrente Sansobbia e l’antica<br />
struttura che prendeva energia<br />
dall’acqua del fiume è ancora ben<br />
visibile sotto il ristorante. Dal 1956 la<br />
famiglia Rossello porta avanti menu<br />
della più rigorosa tradizione ligure:<br />
non mancano mai i ripieni, la pasta<br />
fatta in casa, i ravioli, i pansotti al<br />
sugo di noci, il coniglio con le olive e<br />
la cima. Quando è stagione, ecco i<br />
piatti con le articiocche (carciofi), i<br />
funghi, il cinghiale.<br />
The tiny village of Ellera in the<br />
mountains behind Albisola Superiore,<br />
five kilometers from the sea, does not<br />
just offer one good restaurant, it<br />
offers three. The Mill, Il Molino (the<br />
term, explains the owner, Giovanni<br />
Rossello, comes from mola<br />
[grindstone], while the Italian word<br />
“mulino” designates windmills, which<br />
mill using propellers), is in the heart of<br />
the village center. If you cross the<br />
stone bridge over the Sansobbia<br />
stream you will see the ancient water<br />
mill, well visible from the restaurant.<br />
The Rossello family has been running<br />
the place since 1956, using an<br />
extremely rigorously <strong>Liguria</strong>n<br />
traditional menu. Stuffed vegetables<br />
are never missing, the pasta is made<br />
in-house, along with ravioli, ppaannssoottttii<br />
with nut sauce, rabbit with olives,<br />
and cima. When it is the right season,<br />
there are dishes with articiocche<br />
(artichokes), mushrooms, and wild<br />

Per scoprire l’accogliente ristorante di<br />
Silvano Ferro bisogna addentrarsi<br />
nell’entroterra varazzino, in pieno<br />
Parco Naturale del Beigua. Ad<br />
Alpicella, frazione della cittadina<br />
savonese a solo 10 minuti dal mare,<br />
semplicità e cortesia si uniscono ad<br />
una cucina sfiziosa. Nonostante i<br />
tavoli in legno e le tovagliette di carta,<br />
la brasserie Baccere e Baciccia è tutto<br />
tranne che spartana. La cucina offre<br />
specialità di carne alla brace, di<br />
qualsiasi genere, ma soprattutto,<br />
misura: dalle rostelle alla tagliata,<br />
dall’agnello alla fiorentina, tutto è in<br />
versione extra large. Anche i primi, che<br />
variano ogni sera. Ma il pezzo forte<br />
sono i piatti speciali dalle influenze<br />
francesi: la ciappa (una pietra calda<br />
che consente di cuocere la carne<br />
direttamente al tavolo, accompagnate<br />
da diverse salsine), il pignattin, ovvero<br />
una versione ligure della<br />
bourguignonne, e la mezza furma, una<br />
raclette all’ennesima potenza.<br />

restaurant of Silvano Ferro, you must<br />
leave the sea at Varazze and head into<br />
the Apennine Mountain park, Parco<br />
Naturale del Beigua. When you reach<br />
Alpicella, an outlying quarter of<br />
Savona, which in fact is only 10<br />
minutes from the coast, you will find<br />
simplicity and courtesy united with<br />
delicious cuisine. In spite of the wood<br />
tables and the paper tablecloths, the<br />
brasserie, Baccere e Baciccia, is<br />
absolutely not Spartan.<br />
The cuisine offers grilled specialties of<br />
all types and dimensions, from the<br />
rostelle alla tagliata, to the Florentine<br />
lamb. Everything comes in an extralarge<br />
version, even the first courses,<br />
which change every evening. But the<br />
restaurant’s strong point is its dishes<br />
which show a French influence: the<br />
ciappa (a hot stone which allows you<br />
to cook directly at the table,<br />
accompanied by different sauces), the<br />
ppiiggnnaattttiinn, which is a <strong>Liguria</strong>n version<br />
of the “bourguignonne”, and the<br />
mezza furma, which is a “raclette” to<br />
the highest power.<br />

Lo storico locale dei fratelli Del<br />
Grande, nel pieno centro di Savona, è<br />
un ristorante molto speciale. Sarà<br />
l’atmosfera familiare, la cucina<br />
tradizionale fatta ad arte, il grande<br />
forno a legna all’ingresso o per il fatto<br />
che entrarci significa re immergersi in<br />
uno di quei locali dove sembra che il<br />
tempo si sia fermato. Il menù è scritto<br />
a mano ogni mattina e cambia da<br />
pranzo a cena.<br />
Niente macchinetta del caffè, ma<br />
soprattutto, niente telefono. Le<br />
alternative per prenotare quindi,<br />
rimangono due: presentarsi al bancone<br />
e riservare un tavolo, oppure fare la<br />
fila, e aspettare che uno dei tavoli di<br />
legno dell’ingresso si liberi. Ma proprio<br />
per questo suo sapore autentico,<br />
l’osteria Vino e Farinata è amata dai<br />
turisti ma soprattutto dai savonesi, che<br />
la scelgono con una disinvolta<br />
naturalezza, considerandola quasi una<br />
continuazione di casa propria.<br />
La specialità? La farinata, ovviamente,<br />
ma anche il minestrone di verdure e i<br />
ripieni. Per non parlare del pesce,<br />
sempre fresco e cucinato nel massimo<br />
rispetto della tradizione.<br />
The historic restaurant belonging to<br />
the Del Grande brothers, in the heart<br />
of Savona, is a very special restaurant.<br />
Maybe it is the family atmosphere, or<br />
the traditional cuisine worked to<br />
perfection, or the great wood-burning<br />
oven at the entry, or just simply the<br />
fact that when you walk through the<br />
door, you enter a place where time has<br />
stopped. The menu is written by hand<br />
every morning, and changes from<br />
lunch to dinner.<br />
There is no coffee machine, but more<br />
vitally important, no telephone. This<br />
means the only way to make<br />
reservations here is by: either showing<br />
up at the counter and reserving a<br />
table, or waiting in line, until one of<br />
the wood tables is free. But it is this<br />
authentic flavor that makes the<br />
restaurant so beloved of tourists, and<br />
even more by locals.<br />
The Savonese choose it with a<br />
nonchalant naturalness, considering it<br />
to be almost an extension of their own<br />
house. Its specialties? Farinata (chick<br />
pea flour pancakes) obviously, but also<br />
minestrone, and meat-stuffed<br />
vegetables. And fish. Always fresh, and<br />
cooked with respect for tradition.<br />
