Karel Appel, olandese, uno degli<br />
artisti più importanti del secondo<br />
Novecento, è ricordato per aver<br />
fondato insieme a Constant, Corneille,<br />
Jorn e Alechinsky il gruppo Cobra,<br />
acronimo delle tre capitali,<br />
Copenhagen, Bruxelles e Amsterdam,<br />
da cui provenivano i suoi esponenti. Il<br />
gruppo si caratterizzò per la rilettura<br />
dell’espressionismo in chiave<br />
informale ed ironica.<br />
Karel Appel, che ne fu il principale<br />
rappresentante, era anche un<br />
eccentrico buongustaio capace<br />
magari di accontentarsi di un pranzo<br />
frugale fatto di pane e formaggio<br />
mentre era intento a creare e a lottare<br />
selvaggiamente con la materia<br />
pittorica nel suo atelier di Montecarlo<br />
o nella sontuosa villa medicea<br />
adagiata sulle colline toscane e<br />
caratterizzata da uno splendido<br />
giardino all’italiana.<br />
Ma quando veniva a Genova,<br />
chiamato a produrre dipinti dal suo<br />
amico e mercante Rinaldo Rotta,<br />
esigeva il pesto che egli consumava in<br />
maniera anomala rispetto ai canoni<br />
della cucina ligure, come si può<br />
evincere dal prorompente elogio da<br />
lui espresso in lingua olandese su un<br />
doppio foglio a quadretti. «Nella mia<br />
vita ho viaggiato moltissimo e, anche<br />
attraverso lo stomaco, ho cercato di<br />
approfondire la conoscenza delle città<br />
e dei paesi di tutte le parti del mondo,<br />
assaporando le diverse cucine e le più<br />
varie ricette. L’infinità della vita si<br />
trova proprio nello stomaco.<br />
Quando in un tempo ormai lontano,<br />
più o meno nel 1947, arrivai in Italia,<br />
la grande scoperta della mia vita fu il<br />
pesto, la più grande invenzione di<br />
tutti i tempi: così ricco di gusto, così<br />
unico di materia, così fantastico di<br />
profumo e di colore, così nuovo come<br />
invenzione, così originale, così salubre<br />
per la vita.<br />

Appel’s Ode to Pesto<br />
Karel Appel, the Dutch painter, was<br />
one of the most important artists of<br />
the second half of the 20th century. He<br />
is known today for having founded –<br />
together with Constant, Corneille, Jorn,<br />
and Alechinsky – the Cobra group,<br />
Cobra being the acronym for the three<br />
European capitals, Copenhagen,<br />
Brussels, and Amsterdam, from which<br />
its members came. The group is<br />
remembered for its rereading of<br />
expressionism on an informal and ironic<br />
key. Karel Appel, who was one of the<br />
main representatives of this, was also an<br />
eccentric gourmet capable of being<br />
contented with a frugal lunch of bread<br />
and cheese while he was intent upon<br />

Il seguente aneddoto sottolinea la sua<br />
voracità nei confronti di questo<br />
condimento.<br />
Siccome Appel si applicava di solito<br />
alle tele senza interruzioni, Rotta<br />
pensò bene di recapitargli al mattino<br />
del suo arrivo un enorme vaso di<br />
pesto che gli sarebbe<br />
abbondantemente servito per almeno<br />
una settimana qualora avesse voluto<br />
prepararsi delle trenette.<br />
Quando Rinaldo lo andò a trovare<br />
quella sera stessa, con grande sorpresa<br />
si trovò di fronte al vaso<br />
completamente vuoto e a un Appel<br />
che profumava soavemente di<br />
basilico: aveva trangugiato a<br />
cucchiaiate l’intero contenuto tra una<br />
pennellata e l’altra.<br />

with his pictorial material” – in his<br />
studio in Montecarlo and in his<br />
sumptuous Medici villa on the Tuscan<br />
hills with its splendid garden all’italiana.<br />
But when he would come to Genoa,<br />
called to produce paintings for his<br />
friend and dealer Rinaldo Rotta, he<br />
would demand pesto, which he<br />
consumed in an odd manner with<br />
respect to the canons of Genoese<br />
cuisine. This can be seen in the gushing<br />
eulogy to pesto that he wrote in Dutch<br />
on a double sheet of notebook paper.<br />
"In my life I have traveled far. And<br />
through my stomach I have sought to<br />
deepen my knowledge of cities and<br />
countries all over the world, sampling<br />
their different cuisines and their most<br />
varied recipes. The infinite aspect of life<br />
is to be found through the stomach.<br />
Once, long ago, maybe more or less in<br />
1947, I came to Italy. The greatest<br />
dis<strong>cover</strong>y of my life was pesto. It was<br />
the greatest invention of all times: so<br />
rich in taste, so unique in ingredients, so<br />
fantastic in aroma and color. New as an<br />
invention, original, and so healthy.<br />
The “most fantastic recipe” to be done<br />
with pesto is to spread a soft<br />
gorgonzola cheese on toasted bread<br />
that has the perfume of garlic, and<br />
then add on top of this a bit of pesto.<br />
Drink a red quality Chianti with it, or a<br />
cool white Pigato". The following<br />
anecdote underlines his voracity in the<br />
consumption of this condiment. Since<br />
Appel would normally apply himself in<br />
front of the television without<br />
interruption, Rotta thoughtfully<br />
decided to send him an enormous jar<br />
of pesto which would have served<br />
abundantly to satisfy his needs for a<br />
week, in case he would want to make<br />
himself a dish of trenette pasta. When<br />
Rinaldo dropped by that evening, he<br />
was surprised to find the jar<br />
completely empty, and Appel who<br />
stunk of basil, having eaten the whole<br />
contents between one brushstroke<br />
and another…
