Focaccia of Recco Was at the Crusades<br />

19 aziende e 24 punti vendita<br />
In 2005 a Consortium was founded to guarantee IGP (Protected Geographic Indication) certification.<br />
Today it unites 19 companies and 24 sales points<br />
Storia antica quella della focaccia di Recco,<br />
addirittura dalla terza Crociata, quando<br />
bastavano un po’ di olio, farina, formaggio,<br />
e una pietra d’ardesia per sfamare i<br />
crociati.<br />
Poi passano i secoli, la focaccia resiste immutata,<br />
e bisogna aspettare gli anni Sessanta per<br />
la prima Festa della focaccia con il formaggio,<br />
nella nuova Recco dell’autostrada, dei turisti, e<br />
della pallanuoto.<br />
È passato quasi mezzo secolo, e in tempi di globalizzazione,<br />
dove riprodurre è ormai più facile<br />
che produrre, la focaccia col formaggio, ricercata<br />
e apprezzata, è alla ricerca di una sua<br />
carta d’identità che possa tutelarla per garantire<br />
la qualità di un prodotto solo apparentemente<br />
semplice che mantiene la forza di un legame<br />
secolare con il proprio territorio.<br />
A difenderla ci ha pensato il Consorzio Focaccia<br />
di Recco, nato nel 2005, che tra i suoi<br />
obiettivi si è posto anche l’Igp, l’Indicazione<br />
Geografica Protetta, richiesta che è stata pubblicata<br />
e accolta nella Gazzetta Ufficiale, per<br />
diventare una delle 230 specialità agroalimetari<br />
nel mondo.<br />
Oggi il Consorzio riunisce 19 aziende e 24<br />
punti vendita: “L’idea delle aziende produttrici<br />
- sottolinea Tino Revello del Consiglio del<br />
Consorzio - è che la focaccia con il formaggio<br />
sia consumata nel Golfo Paradiso, un’opportunità<br />
per sviluppare turismo gastronomico<br />
nel territorio, quando si parla tanto di chilometro<br />
zero.<br />
Aggiungo con soddisfazione che i consumi di<br />
focaccia col formaggio sono aumentati di circa<br />
il 15%, complice la crisi che premia un prodotto<br />
che non costa molto fa da primo, secondo,<br />
pasto completo e merenda, oppure la buona<br />
crescenza di Fontanigorda, per quella sfumatura<br />
caratteristica, difficile da definire”.<br />
It’s an old, old story, that of the focaccia of<br />
Recco, dating to the Third Crusades. In those<br />
times all you needed was a bit of olive oil, flour,<br />
cheese, and piece of slate to satiate the hunger of<br />
the Crusaders. Centuries then passed, but focaccia<br />
remained the same. A form of change came in the<br />
sixties with the first Festival of the Focaccia of<br />
Recco – the new Recco – Recco on the highway,<br />
Recco of tourists, world capital of water polo.<br />
Now almost half a century has passed, and in times<br />
of globalization, reproducing is now easier than<br />
producing. Focaccia con Formaggio, sought after and<br />
appreciated, is looking for its identity card to protect<br />
itself, to give it the right quality guarantees for a<br />
product that appears so simple in appearance and yet<br />
has maintained for centuries the right ties with its<br />
own land. Its defender is the consortium, Consorzio<br />
Focaccia di Recco, created in 2005. Among its goals<br />
is to obtain IGP (Protected Geographic Indication)<br />
certification. A request has been published and<br />
accepted in the Gazzetta Ufficiale [that lists changes<br />
or additions to Italian laws], to make it one of the<br />
230 food and agricultural specialties in the world.<br />
Today the Consorzio unites together 19 companies<br />
and 24 sales points. “The producing companies know<br />
that Focaccia con Formaggio is part and parcel of the<br />
Gulf of Paradise,” explains Tino Revell, who is on the<br />
Consortium’s board.<br />
“We can use the denomination as a means of<br />
developing gastronomical tourism in our land,<br />
especially when we talk about kilometer zero. I<br />
would like to add, with satisfaction, that the<br />
consumption of Focaccia con Formaggio is<br />
up approximately 15%. Help has been given<br />
by the economic crisis, which awards a<br />
product that does not cost much to make<br />
from scratch. And secondly because it is<br />
it is a complete meal and a snack. Or<br />
maybe it’s just the good crescenza<br />
cheese from Fontanigorda, that<br />
gives it that characteristic nuance<br />
that is so difficult to define.”<br />

Era il 1874 quando Moltedo Lorenzo<br />
iniziò la saga dei panifici Moltedo.<br />
Un secolo dopo - nel 1973 - il nipote<br />
del capostipite, anche lui Lorenzo<br />
detto Renzo, aprì col figlio Titta in<br />
via Assereto. Oggi nei panifici lavora<br />
la quarta generazione: Ida, Titta,<br />
Luisa, Bruno, Livia. E la quinta sta<br />
imparando il mestiere nel forno e al<br />
banco. I negozi sono a Recco, in via<br />
XX Settembre 2 e via Assereto 15<br />
In far off 1874, Lorenzo Moltedo<br />
began the first of the Moltedo<br />
bakeries. A century later, in 1973, his<br />
grandson, also called Lorenzo<br />
(shortened to Renzo) opened<br />
another bakery in Via Assereto with<br />
his son, Titta.Its shops are in Recco,<br />
on Genoa’s Via XX Settembre 2 and<br />
at Via Assereto 15<br />
