fra tutti (ma l’intero centro storico è da esplorare<br />
con cura) il sontuoso Parlacomemangi,<br />
premio Miglior bottega d’Italia 2007 che ha servito<br />
Michael Douglas e signora e organizzato<br />
eventi culinari pure per Yves Saint Laurent. Vende<br />
funghi di Calizzano, 1100 marche di vini, formaggi<br />
anche liguri,<br />
miele biologico e offre<br />
servizi di consulenza ai<br />
ristoranti.<br />
Altro posto nuovo è il<br />
ristorante e lounge bar<br />
Living Room di Chiavari,<br />
affacciato sugli scogli<br />
della colonia Fara, in<br />
fondo al paese, via dalla<br />
pazza folla, che orga-<br />
nizza compleanni, feste,<br />
brunch e cene con pesce<br />
freschissimo e solida<br />
tradizione.<br />
Per chiudere scomodiamo<br />
David Bixio, un medico<br />
ancora attivo e<br />
con la passione della<br />
gastronomia. Da mezzo<br />
secolo è un dirigente nazionale dell’Accademia<br />
della cucina e il maestro indiscusso della<br />
delegazione del Tigullio. Ecco i suoi consigli<br />
sulle prelibatezze liguri e su dove trovarle. La<br />
torta Pasqualina e i ripieni si comprano alla<br />
Rosticceria Pettinaroli di Chiavari. La cima (e<br />
la Pasqualina), da Fulvio a Sestri Levante. La<br />
farinata invece si mangia (o si porta a casa)<br />
alla nota osteria Luchin di Chiavari e si compra<br />
al Panificio spiga d’oro di Riva Trigoso.<br />
Sui ristoranti il professor Bixio (“Diffidate dai<br />
menu con troppi piatti, sono sicuramente già<br />
prefabbricati!) suggerisce, nella “sua” Sestri:<br />
Polpo Mario, Osteria Mattana e quello<br />
dell’hotel Vis a Vis. E, per la carne, l’antico casale<br />
recuperato delle Cantine Cattaneo, poco<br />
fuori dal centro.<br />
Un’ultima raccomandazione: irrinunciabile la<br />
torta baciocca – a base di patate quarantine,<br />
cipolla e lardo, rustica specialità della Val<br />
d’Aveto- da assaggiare al ristorante dell’Hotel<br />
Lago delle Lame, a oltre mille metri d’altezza.<br />
Senza trascurare il formaggio San Ste, i funghi<br />
e le fragole e i mirtilli in vendita a Borzonasca<br />
quando è stagione.<br />
La baciocca è una torta a base di patate quarantine,<br />
cipolla e lardo. Specialità della Val d’Aveto, insieme al<br />
celebre San Stè fa parte delle tradizioni contadine del<br />
Levante ligure<br />
The baciocca pie contains heritage quarantine potatoes,<br />
onions, and lard. A specialty of the Aveto Valley, together<br />
with its famous San Stè cheese, it reflects the peasant<br />
traditions of eastern <strong>Liguria</strong><br />
tables along the sea, which are relaxing and filled with<br />
sunlight even in the winter, and they lead to shops<br />
that offer refined foods. First among these (but the<br />
whole old town area of Rapallo is worth careful<br />
exploration) is the sumptuous Parlacomemangi, who<br />
won the Miglior bottega d’Italia 2007 [The Best<br />
Boutique in Italy Award] and has served celebrities like<br />
Michael Douglas and his Signora and organized<br />
culinary events for Yves Saint Laurent. It sells<br />
mushrooms from Calizzano, 1,100 types of wine,<br />
cheeses (including<br />
<strong>Liguria</strong>n cheeses),<br />
organic honey, and<br />
offers consulting<br />
services to restaurants.<br />
A new place that is<br />
attracting attention is<br />
the restaurant and<br />
lounge bar called Living<br />
Room in Chiavari. It<br />

faces onto the rocks on<br />
the sea at the Colonia<br />
Fara, at the end of the<br />
town, far from the<br />
madding crowd, a place<br />
to organize birthdays,<br />
parties, brunches, and<br />
dinners with fresh fish<br />
and solid tradition. To<br />
conclude, we are going<br />
to disturb David Bixio, an active doctor with a<br />
passion for gastronomy. For the last half century he<br />
has been a national manager of the Academy of<br />
Cuisine, and an undisputed maestro for the Gulf of<br />
Tigullio delegation. Here are his suggestions on<br />
<strong>Liguria</strong>n delights and where to find them. Torta<br />
Pasqualina and ripieni are wonderful at Rosticceria<br />
Pettinaroli in Chiavari. Cima (and the Pasqualina), at<br />
Fulvio in Sestri Levante. Farinata (eaten there or to<br />
take away) at the famous tavern, Luchin in Chiavari<br />
and also at the Panificio spiga d’oro in Riva Trigoso.<br />
As for restaurants, Professor Bixio (“I don’t trust<br />
restaurants with too much on the menu. That means<br />
the dishes are surely made ahead of time!”) suggests<br />
in his hometown of Sestri Levante: Polpo Mario,<br />
Osteria Mattana and the Hotel Vis a Vis. For meat,<br />
the old renovated farmhouse carved out of the<br />
Cantine Cattaneo, just beyond the city center. A last<br />
tip: don’t miss the Torta Baciocca – based on heritage<br />
quarantine potatoes, onions and lard – try it at the<br />
restaurant of the Hotel Lago delle Lame, at over a<br />
thousand meters above the sea. And don’t neglect<br />
the San Ste cheese, and the mushrooms, strawberries,<br />
and blackberries on sale in the village of Borzonasca<br />
when they are in season.
