tan negli anni Ottanta, parlando con l’ambasciatore<br />
Ino Cassini, ho scoperto che la sua famiglia era proprietaria<br />
dell’immobile. Ci siamo fatti la promessa,<br />
quando il momento fosse venuto, di realizzare un locale<br />
di livello internazionale, che valorizzasse la ristorazione<br />
della nostra città.<br />
Come intendete farlo?<br />
Stiamo lavorando per creare un ristorante che rappresenti<br />
la tradizione – anche il nome è rimasto lo<br />
stesso – ma con un respiro verso il mondo e con un<br />
tocco di creatività in cucina. Per il design mio fratello<br />
Marco e sua moglie Eleonora, hanno deciso di far<br />
rinascere un luogo di rappresentanza sia per businessman<br />
sia per famiglie. Non l’atmosfera degli altri nostri<br />
locali, nessuna replica. Così è rinato Capo Santa<br />
Chiara, ispirato all’ambiente navale e all’atmosfera dei<br />
grandi transatlantici, un’altra mitica storia genovese.<br />
E in cucina?<br />
Ci siamo affidati allo chef Alessandro Garzillo, della<br />
scuderia di Gualtiero Marchesi. Un uomo dotato e determinato,<br />
che propone una cucina originale, anche<br />
se non mancano però i capisaldi della tradizione: le<br />
trofie al pesto, i pansotti al sugo di noce, il cappon<br />
magro o il branzino alla ligure. Ma in lista si trovano<br />
anche noci di cappesante con panissa aromatizzata<br />
al pomodoro secco e insalatina di cannellini e ceci,<br />
ravioli di dentice con burro bianco, uova di Salmone<br />
e alghe, filetto di rombo con asparagi di mare e fagottino<br />
di branzino con spinaci allo zenzero. Grande<br />
attenzione agli ingredienti e alla loro provenienza.<br />
Una cucina di prossimità. L’obiettivo è diventare uno<br />
dei primi dieci ristoranti di pesce in Italia….<br />
Progetti futuri.<br />
Ai Tre Merli al Porto e all’Antica Cantina, lanciamo<br />
una campagna culinaria sulla genovesità. E’ un percorso<br />
storico-culturale interessante che collega Genova<br />
con la Corsica e la Sardegna, la Sicilia, la Turchia<br />
e il Mar Nero. Abbiamo studiato dei menu che<br />
sveleranno queste radici e le influenze che hanno generato<br />
nella cucina italiana in generale.<br />
What restaurant owner would give up the chance of<br />
being at Capo Santa Chiara? It is a cult location for<br />
Genoa, for <strong>Liguria</strong>, for Italy. Boccadasse is a marvelous<br />
spot; I have had my eye on that location for years. In the<br />
end my tenacity, combined with a touch of luck, came to<br />
my aid. In Manhattan in the eighties, while chatting with<br />
the Italian ambassador, Ino Cassini, I dis<strong>cover</strong>ed that his<br />
family owned the place. We made a vow that when the<br />
right moment came, that we would put a restaurant of<br />
international status there, that would valorize the<br />
restaurant sector of our city.<br />
And how do you intend to do so?<br />
We are working to create a restaurant that represents<br />
tradition – even the name has remained the same – but<br />
with a opening to the world and a touch of creativity in<br />
the kitchen. As for design, my brother, Marco, and his<br />
wife, Eleonora, have decided to create an impressive place<br />
that works both for businessmen and for families. It will<br />
not be the atmosphere of our other restaurants, nothing<br />
is repeated. This is how Capo Santa Chiara was reborn,<br />
inspired by naval ambiance and the atmosphere of the<br />
great oceanliners, another legendary Genoese story.<br />
And in the kitchen?<br />
We have given the charge to chef Alessandro Garzillo, of<br />
the “scuderia” Gualtiero Marchesi. He is a man both gifted<br />
and determined, who proposes original cuisine, even<br />
though traditional specialties will also be present: trofie<br />
with pesto, pansotti in nut sauce, cappon magro, sea bass<br />
alla ligure. But on the menu you will also find scallops<br />
with panissa (chick pea flour croquettes) aromatized with<br />
sun dried tomatoes, and salad with cannellini beans and<br />
chick peas, ravioli stuffed with dentex (a type of fish) with<br />
white butter, salmon eggs and algae, filet of turbot with<br />
sea asparagus, and fagottino of sea bass with spinach and<br />
ginger. Great attention is paid to the ingredients and their<br />
origins. A cuisine of proximity. The goal is to become one<br />
of the ten best fish restaurants in Italy…<br />
Future projects?<br />
At the Tre Merli al Porto and at the Antica Cantina, we are<br />
going to launch a culinary campaign on Genoese-ness. It<br />
is an interesting historic-cultural route that connects<br />
Genoa with Corsica and Sardinia, Sicily, Turkey, and the<br />
Black Sea. We have carefully studied the menu which will<br />
unveil the roots and the influences which have generated<br />
Italian cooking in general.<br />
