The research was conducted on wheat characterizedby the following quality parameters: Hectolitric mass 76 065 ± 3460 kg / hl, Moisture 12.256 ±1.214%, Wet gluten 31.216 ± 6.702%, Gluten deformation index 9.754 ± 7.145 mm ± 329 048,Falling number 77.176 seconds, Gluten index 46.958 ± 25.708, Protein content 14.086 ± 2.003%.Results showed that despite a significant negative correlation (r = -0.61) between the twoquality parameters, the coefficient of determination is low (R 2 = 0.360). In addition, correlationbecomes negligible within the ranges characterized by high values of both parameters (over 80 forGluten index and 20 mm for Gluten deformation). This suggests that the two quality parameters ofgluten can not replace each other in quality assessment procedures. They should be utilized together.Key words: wheat, crop quality, gluten index, gluten deformation, correlation indexINTRODUCTIONWheat production in Romania is characterized by large variations in cropquality from one year to another, especially the variation of some parameters whichreflect the enzymatic activity (falling number, strain index). Although it has beenclaimed the lack of adaptation of the Romanian varieties to new climatic conditionsfor higher quality variations, certain studies have shown that the main causes are:the inadequate cultivation technologies for the wheat requirements, inappropriateharvesting time, improper storage and handling of crops [ 2].We also found that the assessment of gluten quality is done through theexcessive use of a single descriptor, namely the index of deformation, due to lackof popularity among wheat manufacturers and processors of other methods forevaluating the quality of gluten, as Zeleny index or gluten index [1]. Theassessment type is widely used, given that there are studies showing that the glutenindex parameter can be a good predictor for a range of rheological parameters ofdough, such as: area under the extensografic curve, the extensografic resistance(Anne Ingver and Reine Kopp, 2004), the alveografic work - W, mixograph peaktime (Gaines et al., 2006), the alveografic parameters Resistance (P), Extensibility(L), the extensibility index of the gluten (G), the Elasticity index (Ie ) and thefarinographic parameter named Hydration capacity (NC Popa et al., 2009, 2010)[3, 4, 5, 6].173
