Durch das Rösten der Rohbohne (Kern einer roten
Frucht) erhält diese ihr eigenwilliges Aroma. Es heißt,
dass Arabicas aus Süd- und Mittelamerika eine würzige
und nussige Note haben, Bohnen aus Afrika meist
eine ausgeprägtere Fruchtnote besitzen, der asiatische
Kaffee dagegen sei erdig und schokoladig.
Ein guter Kaffeeröster kennt seine Bohnen genau und
röstet sie je nachdem, in welcher Form der Kaffee getrunken
werden soll (z.B. Filterkaffee oder Espresso).
Dem Röstmeister wird somit ein großes Maß an Fingerspitzengefühl
abverlangt.
Roasting the raw bean (the pit of a red fruit) gives
it its unique aroma. It is said that the Arabicas from
South and Central America have a spicy and nutty flavour,
with beans from Africa generally having a more
fruity taste and the Asian bean being more earthy and
chocolaty.
A good coffee roaster knows his beans, and roasts
them in the way that makes the special coffee required
(e.g. filter or espresso). And so the master roaster has
to have a fine touch.
