Ich kann mich noch gut an meinen ersten <strong>München</strong>-Besuch<br />
vor mehr als dreißig Jahren erinnern.<br />
Was war ich aufgeregt! Für all die Sehenswürdigkeiten<br />
<strong>und</strong> schönen Geschäfte hatte ich überhaupt<br />
keinen Blick. Auf Empfehlung meines damaligen<br />
Chefs Paul Haeberlin von der Auberge de l’Ill <strong>im</strong><br />
Elsass, wollte mich der damals bereits über die<br />
Landesgrenzen hinaus bekannte Küchenchef Eckart<br />
Witzigmann kennenlernen. Das war eine große<br />
Auszeichnung für mich, denn nur die besten seiner<br />
Schüler schickte er zu Witzigmann.<br />
Den Antrittsbesuch hatte ich zum Glück trotz meiner<br />
Aufregung nicht verpatzt, denn ein paar Monate später<br />
begann ich als Sous Chef in Witzigmanns Restaurant<br />
Aubergine in <strong>München</strong> zu arbeiten. 1980 wurde er als<br />
erster in Deutschland mit 3 Sternen vom Guide Michelin<br />
ausgezeichnet. Das Tantris mit meinem Vorgänger<br />
Heinz Winkler als Küchenchef folgte ein Jahr darauf<br />
auch mit 3 Sternen. Für mich begann eine intensive,<br />
lehrreiche Zeit in der Aubergine: bis in die Nacht hinein<br />
Vollgas in der Küche, früh morgens wieder raus<br />
in die Großmarkthalle nach Sendling mit kurzen Abstechern<br />
zum Viktualienmarkt, das sind Orte, die ich<br />
heute noch liebe. Das geschäftige Treiben der Händler<br />
<strong>und</strong> Einkäufer, die Top-Ware zum Anfassen <strong>und</strong> Probieren.<br />
Die Gespräche mit den Standl-Besitzern. Das<br />
Warenangebot, das wir hier in <strong>München</strong> bekamen, war<br />
für Deutschland einzigartig. Ich hab’ gelesen, dass die<br />
Großmarkthalle vor kurzem 100 Jahre alt geworden<br />
ist <strong>und</strong> heute nach Paris <strong>und</strong> Barcelona die größte in<br />

than thirty years ago. I was so excited! It wasn’t all<br />
the sights and stores I was interested in though.<br />
On the recommendation of my boss at the t<strong>im</strong>e<br />
Paul Haeberlin of the Auberge de l’Il in Alsace, the<br />
internationally renowned chef Eckart Witzigmann<br />
wanted to get to know me. It was a huge honour<br />
for me, because he only sent his best pupils to<br />
Witzigmann.<br />
Despite my nervousness, I apparently didn’t botch my<br />
interview, because just a few months later I began<br />
work as a sous chef in Witzigmann’s restaurant Aubergine<br />
in Munich. In 1980 he was the first chef in<br />
Germany to be awarded three stars by the Michelin<br />
Guide. The Tantris, with my predecessor Heinz Winkler<br />
as chef, was next with three stars the next year.<br />
It marked the beginning of an intensive, educational<br />
t<strong>im</strong>e in the Aubergine: full speed ahead in the kitchen<br />
till late at night, then early in the morning off to the<br />
market halls in Sendling, followed by brief excursions<br />
to the Viktualienmarkt – places I still love to this day:<br />
the busy vendors and buyers, the top-quality goods to<br />
touch and taste, chatting with the stand owners. The<br />
range of food products we could get here in Munich<br />
was unique in Germany. I read somewhere that the<br />
market halls recently turned 100, and that they are<br />
now the third largest of their kind in Europe, behind<br />
only Paris and Barcelona. A well-earned success! Indeed,<br />
Munich has a very special role in the development<br />
of top gastronomy in Germany. It is here that<br />
