CERTIFICATE PROGRAMS<br />

DIETETIC SERVICE SUPERVISOR<br />

Certificate<br />

Completion of the Dietetic Service Supervisor Certificate program meets the<br />

standards of training for Dietetic Service Supervisors specified by the Department<br />

of Health Services. Completion of this certificate qualifies students<br />

to work as the food service director in a skilled nursing facility. Some responsibilities<br />

of the Dietetic Service Supervisor are to supervise employees, assure<br />

menu acceptance by clients, and manage food production. Completion<br />

of the program qualifies a person to take the Dietary Managers Exam.<br />

Successful completion of English 28 is strongly advised for the DSS Certificate.<br />

Concurrent enrollment, or completion of Math 105, or Learning Skills<br />

10ABC is advised to ensure successful completion of many courses in this<br />

certificate. A grade of “C” or better is required in all courses. Students must<br />

provide their own transportation to assigned field placement sites. A Mantoux<br />

test, health exam and liability insurance are required for supervised<br />

practice courses. Some sites may require a background check.<br />

FAMILY AND CONSUMER STUDIES 21<br />

(SAME AS NUTRITION 21)<br />

Nutrition<br />

3 UNITS - (UC: CSU)<br />

Co-requisite: English 21 or equivalent.<br />

The current concepts in nutrition are presented in a lecture/discussion format.<br />

Nutrition is the science that deals with the role of nutrients in the human<br />

body. Nutrition in human development from conception through the life cycle<br />

is emphasized.<br />

Food Preparation<br />

3 UNITS - (CSU)<br />

Advisory: English 21 or equivalent.<br />

Lecture 2 hours. Laboratory 3 hours.<br />

This course is offered only in the spring semesters. The scientific fundamentals<br />

of food preparation are emphasized using current technology. The role<br />

of food in cultures, nutrition and the economy are integrated into meal planning<br />

and preparation.<br />

FAMILY AND CONSUMER STUDIES 27<br />

Nutrition Care<br />

3 UNITS - (CSU)<br />

Prerequisite: Family and Consumer Studies 21, 55, 56 or equivalent.<br />

Co-requisite: Concurrent enrollment in Family and Consumer Studies 127<br />

required.<br />

Advisory: English 101, Biology 25 or Anatomy 1.<br />

This course is offered only fall semesters, day session. Nutrition problems of<br />

patients with cancer, AIDS, diabetes, cardiovascular diseases, renal diseases,<br />

and liver diseases are studied for appropriate menu modifications. The development<br />

and implementation of nutrition care plans are emphasized.<br />

FAMILY AND CONSUMER STUDIES 28<br />

Advanced Nutrition Care<br />

3 UNITS - (CSU)<br />

Prerequisite: Family and Consumer Studies 27 or equivalent.<br />

Co-requisite: Concurrent enrollment in Family and Consumer Studies 128<br />

required.<br />

This course is offered only spring semesters, day session. Nutritional needs<br />

at each stage of the life cycle are studied in depth. Cultural food preferences<br />

are studied and incorporated into nutrition education and counseling of clients.<br />

FAMILY AND CONSUMER STUDIES 29<br />

Dietetic Seminar<br />

1 UNIT - (CSU)<br />

Prerequisite: Family and Consumer Studies 28 with a satisfactory grade or<br />

equivalent.<br />

This course is offered only spring semesters, day session. Introduction to<br />

institutional menu analysis for food requisitioning, food production planning<br />

and implementation. Basic principles of quantity cooking are emphasized.<br />

FAMILY AND CONSUMER STUDIES 31<br />

Marriage and Family Life<br />

3 UNITS - (UC: CSU)<br />

Prerequisite: English 21 or equivalent.<br />

Interpersonal growth and rewarding relationship are explored over the course<br />

of the family life cycle. Examines the impact of social, psychological and<br />

economic forces that affect the family.<br />

FAMILY AND CONSUMER STUDIES 50<br />

Sanitation and Safety<br />

3 UNITS - (CSU)<br />

Co-requisite: Concurrent enrollment in English 21 or equivalent.<br />

An introduction to the basic principles of food borne illnesses, sanitation<br />

principles and systems, quality assurance, safety, work simplification and<br />

government regulation of food service.
