With the exception of the period 1996 to 1999, this shows that delivery has exceeded salesconsiderably and suggests that supply exceeds demand, from 2000 onwards in particular. Thesesurplus alternative eggs have traditionally been ‘cascaded’ into caged egg sales without a premium,although this is technically no longer possible under the Egg Marketing Directive. The extent towhich this practice continues is unclear, although if it is still taking place it will be apparent as therewill be a discrepancy between the egg and pack production codes.211
