Monoterpene levels in different grapevine (Vitis vinifera L.) cultivars <strong>and</strong> clones<br />

during fruit ripening<br />

Terpenes are widespread in the plant kingdom <strong>with</strong> different functions like pest protection <strong>and</strong><br />

attraction of insects to pollinate flowers. In white wine monoterpenes largely determine the<br />

characteristic aroma profile of a fruity <strong>and</strong> flowery grape variety. In previous studies authors<br />

could identify grape varieties by means of twelve monoterpenes <strong>and</strong> divide them into three<br />

aromatic classes: (1) varieties <strong>with</strong> a high aromatic Muscat related aroma, (2) <strong>with</strong> a fruity<br />

Riesling-related aroma <strong>and</strong> (3) varieties <strong>with</strong> a neutral bouquet [1]. The objective of this study<br />

was to characterize <strong>and</strong> compare the monoterpene contents <strong>and</strong> seasonal variation of different<br />

grape varieties <strong>and</strong> clones. Grapes of aromatic, less <strong>and</strong> nonaromatic varieties were collected<br />

during ripening periods in 2007, 2008 (2 sampling dates, respectively) <strong>and</strong> 2009 (5 sampling<br />

dates: from July 15 to October 5) at the Geisenheim Research Center. Free <strong>and</strong> glycosidic<br />

bounded monoterpenes were extracted <strong>with</strong> a solidphase- extraction-method (SPE) using Strata-x<br />

(Phenomenex)-cartridges. Glycosides were enzymatically hydrolysed <strong>and</strong> extracts were analysed<br />

by GC/MS. In this study the focus was on the monoterpenols linalool, nerol, geraniol <strong>and</strong> α-<br />

terpineol, the furanoside <strong>and</strong> pyranoside cis/trans isomers of linalooloxide, the aldehydes neral<br />

<strong>and</strong> geranial plus two diendiols. Results show large differences between cultivars <strong>and</strong> in<br />

particular two clones of “Roter Traminer”. Highest contents were found in grapes of<br />

“Siegerrebe” <strong>and</strong> cultivars of Muscat varieties like “Morio Muskat”. Only traces of<br />

monoterpenes were found in “Dornfelder” <strong>and</strong> “Chardonnay 1 Gm”. During ripening linalool<br />

increased significantly in most cultivars, while α-terpineol levels varied only slightly <strong>with</strong> time.<br />
