Background:
The center was created on April 1, 2013 as INOVATEC
(Center for Technological and Sensory Innovation
Applied to Product Development), involving the areas
of product development and sensory analysis. In July
2015 the name was changed to Center for Innovation in
Food Technology, with the inclusion of two new areas
of study (oil and fat technology and new technologies
for food preservation).
Overall Objectives:
To support food companies in the development and sensory
evaluation of products, contributing to increase their success
rate in the market and meet the needs of consumers.
Areas of Expertise:
1. Development of new products: In-depth studies in
the area of development of new products.
2. Sensory analysis: Study of the application of sensory
analysis to the development of new products.
3. Oil and fat technology: Application of new
ingredients and technologies related to oils and fats to
the development of new products.
4. Thermal treatment and new technologies: Study
of the interference of thermal treatment in the
development of products.
