Background:
NEPOA was created on May 12, 2011 by a group
of graduate and undergraduate students who
were carrying out research activities in the
LabCarnes of DCA under the coordination of
Professor Eduardo Mendes Ramos. Initially, the
center focused on work related to the research
developed by students in LabCarnes. Over time
and with the arrival of new members, the focus
shifted to industrial processes and research for
undergraduate students in the areas of food
engineering, veterinary medicine and zootechnics.
Nowadays, besides studying processes involved in
the production and processing of different animal
products (meat, eggs, honey, etc.), the center has
also been working on projects for the development
of new products in order to add value to different
products of animal origin.
Overall Objectives:
To bring together professionals and students with
an interest in the area of food materials. To discuss
technical issues related to their application and
structure. To organize courses, lectures and debates,
contributing to the enhancement of knowledge of this
science.
Areas of Expertise:
1. Animal Products Technology: Study of the production
and processing systems of animal products (meat,
honey and eggs), focusing mainly on product quality.
2. Meat Science and Technology: Study of the meat
production chain, especially the procurement
and processing stages, focusing on quality and
development of new products.
3. Development of New Animal Products: Study of the
development of new products based on animal raw
materials (meat, honey and eggs), focusing mainly on
product quality.
