BROWN & POISON'S
CORN FLOUR.
New Recipes specially prepared for Brown & Poison :—
OIVIELETTE.—Beat up 2 egg.s, and mix with them 1 o/,. Corn P"'luur and nearly a
tea-cupful oi milk. Add a little pepper and isalt, and sugar if desired. Throw the
whole on to a flat saucepan, previously well heated and covered with melted butter.
Kee)> the saucepan in motion over the fii-e till the under side of the omelette is
slightly browned. Then turn it or hold it in front of the fire till the upper side is
browned. Uoll it up and serve at once. This makes a lighter and more delicious
omelette than when prepared with eggs alone.
Pie-Cpusts, Tarts, Pastries, and Rich Cakes, when baked with
half Corn Flour and half common Hour, are tiicr in tlavoui-, ligliter, and more easy
uf digestion than when baked with common floui- alone.
Corn Flour is speciaUy suitable for Thickening" SoupS, SaUCeS,
Gravies, &C., as it does not affect their c'earness, eijhjur, or flavour.
