date there were fewer cattle in <strong>Utah</strong> than for several<br />

preceding years, 32 the operations <strong>of</strong> large stock companies<br />

33 having forced the price to a maximum figure,<br />

and caused large droves to be sent out <strong>of</strong> the<br />

country. 34<br />

The dairy products <strong>of</strong> <strong>Utah</strong> for 1883 were about<br />

630,000 gallons <strong>of</strong> milk, 1,300,000 pounds <strong>of</strong> butter,<br />

and 125,000 pounds <strong>of</strong> cheese. Of eggs the yield<br />

was more than 1,100,000 dozen, <strong>of</strong> honey more than<br />

130,000 pounds, and <strong>of</strong> wax about 2,300 pounds. The<br />

home consumption <strong>of</strong> all these articles was very large,<br />

yet heavy consignments <strong>of</strong> eggs were made to San<br />

Francisco, where they sold at much higher rates than<br />

eastern eggs. Some <strong>of</strong> the butter found a market in<br />

Idaho and Montana, though imports <strong>of</strong> eastern butter<br />

were still considerable.<br />

The number <strong>of</strong> horses and mules in the territory at<br />

this date was estimated at not less than 75,000,^ the<br />

most prominent breeds <strong>of</strong> horses being the Norman,<br />

Clydesdale, and Hambleton. From the cross <strong>of</strong> the<br />

1873. Among the prominent stockmen <strong>of</strong> <strong>Utah</strong> may be mentioned Ezra T.<br />

Clark <strong>of</strong> Farmington, Davis co. Mr Clark came to <strong>Utah</strong> in 1S48, crossing<br />

the plains in charge <strong>of</strong> a company, and the same year settled on his farm.<br />

About 1869 he engaged in stock-raising in Idaho. He was the owner <strong>of</strong> a<br />

flouring mill in Morgan co. He crossed the plains eleven times, and travelled<br />

50,000 miles as a missionary, always paying his own expenses.<br />
