TRAVELS IN ASIATIC TURKEY,<br />

<strong>the</strong>ir government. They are hardy, temperate, patient under af-<br />

flictions, <strong>and</strong> upright <strong>in</strong> <strong>the</strong>ir deal<strong>in</strong>gs. Hav<strong>in</strong>g been accustomed<br />

from an early age to an abstemious mode of liv<strong>in</strong>g, <strong>and</strong> <strong>in</strong>nred to<br />

hardships,<br />

those of <strong>the</strong> <strong>in</strong>ferior classes are well calculated for a mi-<br />

litary life. Their customary diet consists of a small portion of<br />

bread or biscuit, with a scanty allowance of cheese, onions, olives,<br />

<strong>and</strong> oil, whenever ei<strong>the</strong>r or any of <strong>the</strong>se articles can be procured.<br />

It occurs but seldom that <strong>the</strong>y can gratify <strong>the</strong>mselves by an <strong>in</strong>dul-<br />

gence <strong>in</strong> animal food; <strong>and</strong> <strong>in</strong> such cases <strong>the</strong>y are very fond of a pilaw,<br />

consist<strong>in</strong>g of a strong gravy made from mutton, fowls, &cc.<br />

<strong>in</strong> which a proportion of boiled rice is stewed. This luxury, how-<br />

ever, but seldom falls to <strong>the</strong> lot of <strong>the</strong> military by whom <strong>the</strong><br />

Turkish ranks are filled, <strong>and</strong> who have recourse to o<strong>the</strong>r <strong>and</strong> less<br />

costly gratifications, <strong>the</strong> pr<strong>in</strong>cipal of which are coffee <strong>and</strong> tobacco.<br />

The former <strong>the</strong>v dr<strong>in</strong>k <strong>in</strong> as<br />

strong an <strong>in</strong>fusion as possible; <strong>and</strong> to<br />

<strong>the</strong> use of <strong>the</strong> latter<br />

<strong>the</strong>y are so much addicted, that <strong>the</strong> pipe is <strong>the</strong><br />

<strong>in</strong>separable companion of many of <strong>the</strong> women even among <strong>the</strong><br />

lower ranks of <strong>the</strong> Turks. W<strong>in</strong>e be<strong>in</strong>g prohibited bv <strong>the</strong> Koran,<br />

<strong>the</strong> usual beverage of every class of Mussulmen is water; but when-<br />

ever <strong>the</strong>y can prevail on <strong>the</strong>mselves to overcome <strong>the</strong>ir religious scru-<br />

ples so far as to <strong>in</strong>dulge <strong>in</strong> <strong>the</strong> use of w<strong>in</strong>e or spirits, <strong>the</strong>y swallow<br />

<strong>the</strong>m so copiously, <strong>and</strong> with such eagerness, that, <strong>in</strong> <strong>the</strong> <strong>in</strong>toxication<br />

which follows, <strong>the</strong>y become extreme.<br />

The game of chess, which is not prohibited like gambl<strong>in</strong>g with<br />

cards or dice, is one of <strong>the</strong>ir amusements <strong>in</strong> <strong>the</strong> camp, as well as<br />

<strong>in</strong> <strong>the</strong> towns. They are likewise very fond of s<strong>in</strong>g<strong>in</strong>g, which is<br />

generally performed <strong>in</strong> a harsh <strong>and</strong> discordant tone, without any<br />

modulation of <strong>the</strong> voice.<br />

scanty allowance of bread, or biscuit <strong>and</strong> rice<br />

(<strong>and</strong> of barley for his horse, if<br />

<strong>the</strong> Turk-<br />

ish soldier is allowed from five to ten aspers, that is, from a penny<br />

to two-pence, English, per day. With this wretched stipend he<br />

is obliged to supply himself with tobacco, coffee, onions, olives,<br />

tendance, <strong>and</strong> can place as small a dependance on <strong>the</strong> adm<strong>in</strong>istra-<br />

tion of <strong>the</strong> necessary remedies, which are very rarely supplied to<br />

combat his disease. 1 was acqua<strong>in</strong>ted with four surgeons belong<strong>in</strong>g<br />

to <strong>the</strong> army of <strong>the</strong> Gr<strong>and</strong> Vr/ier, three of whom were Italians,<br />

whose practice was chiefly conf<strong>in</strong>ed to <strong>the</strong> pachas <strong>and</strong> comm<strong>and</strong>ers<br />

of <strong>the</strong> different corps. They fell victims to <strong>the</strong>ir professional duties.
