<strong>and</strong> France. In my subsequent details relative to <strong>the</strong> Gr<strong>and</strong> Vi-<br />

sier <strong>and</strong> <strong>the</strong> Capitan Pacha, 1 shall have occasion to notice,<br />

<strong>in</strong> a<br />

particular manner, <strong>the</strong> improvements he has <strong>in</strong>troduced <strong>in</strong> his army<br />

<strong>and</strong> mar<strong>in</strong>e. He is of a courteous <strong>and</strong> affable character; <strong>and</strong> his<br />

physiognomy is t<strong>in</strong>e <strong>and</strong> full oi expression. His figure is well pro-<br />

portioned, <strong>and</strong> his aspect comm<strong>and</strong><strong>in</strong>g.<br />

My companions <strong>and</strong> myself were <strong>in</strong>vited, after <strong>the</strong> procession to<br />

d<strong>in</strong>e with <strong>the</strong> Gr<strong>and</strong> Seignor's surgeon, at whose house we were<br />

very well enterta<strong>in</strong>ed <strong>in</strong> <strong>the</strong> Turkish style; <strong>and</strong> notwithst<strong>and</strong><strong>in</strong>g<br />

we were, <strong>in</strong> eat<strong>in</strong>g, compelled to adopt <strong>the</strong> mode practised by <strong>the</strong><br />

Turks, that is, that we were unprovided with ei<strong>the</strong>r knife, fork,<br />

or plate, we contrived to make a good d<strong>in</strong>ner. The follow<strong>in</strong>g is<br />

a concise description of <strong>the</strong>se repasts.<br />

A cloth hav<strong>in</strong>g been laid on<br />

<strong>the</strong> floor, a small table with <strong>the</strong> legs turned uppermost is placed on<br />

it, <strong>and</strong> on this aga<strong>in</strong> is laid a large circular waiter of t<strong>in</strong>ned copper,<br />

round which <strong>the</strong> company seat <strong>the</strong>mselves. Before each of <strong>the</strong><br />

guests, bread <strong>in</strong> <strong>the</strong> form of a flat pancake, <strong>and</strong> two spoons are<br />

placed. The dishes are served up s<strong>in</strong>gly, one after <strong>the</strong> o<strong>the</strong>r ; <strong>and</strong><br />

if filled with soup or liquid food, <strong>the</strong> spoons are. resorted to. If,<br />

on <strong>the</strong> o<strong>the</strong>r h<strong>and</strong>, <strong>the</strong>y conta<strong>in</strong> solids, <strong>the</strong><br />

guests help <strong>the</strong>mselves<br />

with <strong>the</strong> thumb <strong>and</strong> f<strong>in</strong>ger. However repugnant this custom must<br />

have been to <strong>the</strong> feel<strong>in</strong>gs <strong>and</strong> ideas of Englishmen, a keen appetite,<br />

<strong>and</strong> <strong>the</strong> savour<strong>in</strong>ess of <strong>the</strong> dishes, <strong>in</strong> some measure reconciled us to<br />

it; <strong>and</strong> custom, which sways us so powerfully, enabled, us, <strong>in</strong> <strong>the</strong><br />

sequel, entirely to get <strong>the</strong> better of our squeamishness. The meats<br />

are <strong>in</strong><br />

general cut small for <strong>the</strong> convenience of those who are to<br />

partake of tfeem ; but on <strong>the</strong> present occasion whole ducks were<br />

served. These <strong>the</strong> donor of <strong>the</strong> feast pulled <strong>in</strong> pieces with his f<strong>in</strong>-<br />

gers, <strong>and</strong> distributed <strong>the</strong> portions to his guests. Pipes <strong>and</strong> coffee<br />

were brought <strong>in</strong> after d<strong>in</strong>ner, <strong>and</strong> we at<br />

length took our leave.<br />

On <strong>the</strong> 15th, <strong>in</strong> <strong>the</strong> I morn<strong>in</strong>g, accompanied General Kbehler<br />

to Pcra, <strong>and</strong> from <strong>the</strong>nce to Constant<strong>in</strong>ople, where we had an <strong>in</strong>-<br />

terview of nearly two hours with his Excellency Hadgi Ibrahim<br />

Effcndi, with whom <strong>the</strong> general had some particular<br />

bus<strong>in</strong>ess to<br />

transact. In <strong>the</strong> course of this visit, a silver salver, conta<strong>in</strong><strong>in</strong>g<br />

conserve of roses, <strong>and</strong> o<strong>the</strong>r sweetmeats, was h<strong>and</strong>ed round, <strong>in</strong> addition<br />

to <strong>the</strong> usual refreshments of pipes <strong>and</strong> coffee. When we<br />

were about to take leave, each of us was presented with two f<strong>in</strong>ely<br />

not to omit here <strong>the</strong> con-<br />

wrought musl<strong>in</strong> h<strong>and</strong>kerchiefs. I ought<br />

clud<strong>in</strong>g pare of <strong>the</strong> ceremony. After we had taken a draught of<br />

sherbet, which was presented to us, our h<strong>and</strong>s were spr<strong>in</strong>kled with
