nal, altas concentraciones de SO2 , etc.) y durante el envejecimiento, son las responsables de la producción de compuestos aromáticos negativos, originados por los fenoles volátiles (4-etilfenol, 4-etilguayacol y 4-etilcatecol) caracterizados por aromas de tipo animal (caballo, corral, etc.), de farmacia (tirita, medicamento, etc.) y de tinta. A nivel internacional, el volumen de vino afectado por este defecto es bastante importante. Diversos estudios demuestran que este defecto es detectado y rechazado tanto los profesionales como los consumidores. Incluso cuando se han tomado todas las medidas de prevención, todavía puede haber posibilidades de que las Brettanomyces alteren la calidad del vino acabado y llegar al cliente en malas condiciones. Si el enólogo se enfrenta a esta situación, tiene varias opciones, aunque hasta la fecha no se ha encontrado ninguna solución milagrosa. El quitosano de origen fúngico, un polímero derivado de la quitina del Aspergillus niger, es efectivo para disminuir considerablemente la población de Brettanomyces de forma selectiva. Al igual que el almidón, la celulosa y el colágeno, el quitosano es uno de los principales biopolimeros naturales. De hecho, el quitosano ya se utiliza en numerosos sectores por sus propiedades microbianas y de textura, de la agricultura a la alimentación y de la medicina a la cosmetología. La eficacia del quitosano de origen fúngico para reducir y eliminar grandes concentraciones de Brettanomyces bruxellensis ha sido confirmado por Aurélie Bornet (tesis doctoral 2006), así como muchos ensayos realizados en los últimos años en bodegas de diferentes áreas, que han contribuido al desarrollo y la validación de este producto. Se ha validado la dosis de 4g/hL, tras 10 días de contacto entre el quitosano de origen fúngico, llamado NoBrettInsideTM , y el vino. Los vinos tratados no muestran diferencias significativas en las pruebas dúo-trío en relación con los vinos de control, y cuando la diferencia se percibe, se prefiere sistemáticamente el vino tratado. Durante el año 2011, se realizaron diferentes experiencias sobre vinos contaminados por Brettanomyces en distintas regiones de España y Portugal, donde se contrastó la efectividad del tratamiento, que se representan en la figura 4. El conocimiento adquirido a través de todas estas experiencias han permitido un mejor entendimiento del modo de acción del quitosano sobre las células de Brettanomyces (TAILLANDER et al. 2012). 339 Livro Actas
