roots to this physical proximity: Frozen Fish International,
Deutsche See and Nordsee all emerged from the North
Sea fishing fleet founded in 1896, but now all go their own
separate ways. Since 2006, Frozen Fish International has
been owned by the British finance investor Permira.
From frozen block to fingers
Freshness is key during production. The fish is already
skinned, boned and frozen in freshly caught state while
still at sea in a kind of floating factory. It arrives on the
conveyor belt at Frozen Fish International as a frozen block
weighing about 7.5 kg. The block of fish is sawn up in
several stages to produce 378 pieces of raw fish from each
block. At the moment they are still naked and bare. The
fully automatic belt pushes them under a roller that coats
them in batter so that the subsequent breading phase
adheres better to the fish, producing the crunchy golden
yellow coating.
Now the fingers run through a closed section of the
machine onto a bed of dry breadcrumbs. Additional
breadcrumbs are scattered down from above. The mixture
