2. Drop into a large pitcher, fill with boiling water, and steep 5 minutes.

3. Add a sprig of fresh peppermint or spearmint (preferably from your

garden) and a dash of lemon juice.

AH! Now there’s a thing! Just when people were wondering how to take

the blah out of breakfast, along comes breakfast compost compote, and

it’s taking the breakfast world by storm.

Compotes and compost have both been around for ages, and it’s

amazing that it’s only now that people have made the connection. The

words are so similar they practically beg to be turned into each other.

If you want to make an epic pancake or waffle brunch, top them with

sweet compost compote — and making it is as easy as pie.

In a saucepan, combine 4 cups of compost, 1 cup of water, and ½ cup

of organic sugar. If you’re feeling crazy, add a tablespoon of brandy. Over

medium heat, bring the mixture to a boil, thickening to your desired

consistency, maybe 2-3 minutes.

Besides pancakes or waffles, you can also use it to top French toast,

oatmeal, yogurt, ice cream, and popcorn.

In the unlikely event you have anything left over that no one can eat,

you know what to do — compost it.
