These are i.e. fertilized eggs,eggs from hens which were fed mixtures without animal by products, eggs from hens whosenutrition consisted <strong>of</strong> high percentage <strong>of</strong> corn, eggs with high content <strong>of</strong> semi-unsaturated<strong>fatty</strong> <strong>acids</strong> <strong>and</strong>/or small content <strong>of</strong> cholesterol, eggs with high content <strong>of</strong> vitamin B, eggsenriched with Omega 3 <strong>fatty</strong> <strong>acids</strong>, eggs enriched with iodine, eggs with high content <strong>of</strong>vitamin D, eggs containing substances which have favourable effect against allergies <strong>and</strong>eggs with two yolks. Eggs whose content <strong>of</strong> certain nutritious substances has beenintentionally altered are called designer eggs.THE EFFECT OF THE HOUSING SYSTEM ON EGG QUALITYToday, in production <strong>of</strong> table eggs, the cage system is mainly present or as it is popularlyknown as ″non-enriched cage″ <strong>and</strong> over 90% <strong>of</strong> layers <strong>of</strong> table eggs are housed in thissystem. New regulations <strong>of</strong> the European Union determine the minimum <strong>of</strong> 550 cm 2 <strong>of</strong> floorspace per bird in cages. This minimum st<strong>and</strong>ard has to be applied until 2012 when batterysystem in poultry housing will completely be prohibited. It is expected that application <strong>of</strong>this directive will lead to considerable decrease in production <strong>of</strong> table eggs in EU <strong>and</strong> induceimport <strong>of</strong> eggs from non-member states. Decrease in production <strong>of</strong> table eggs will result inreduced pr<strong>of</strong>it <strong>and</strong> number <strong>of</strong> employees. On the other h<strong>and</strong>, non-member states which arenot in position to comply with these regulations <strong>and</strong> st<strong>and</strong>ards in housing <strong>of</strong> layers, due tolower production costs <strong>and</strong> higher production have opportunity to increase the sale <strong>of</strong> tableeggs on EU market. Globally, application <strong>of</strong> new directives will have no general effect onimprovement <strong>of</strong> poultry welfare, it will cause regionalization <strong>of</strong> the problem.Production <strong>of</strong> table eggs used numerous strategies in order to create products <strong>of</strong> specialquality <strong>and</strong> known origin (br<strong>and</strong> egg). New production systems have developed first in EUcountries <strong>and</strong> later in other developed world countries aiming to provide poultry welfare <strong>and</strong>satisfy the requests <strong>of</strong> consumers <strong>of</strong> eggs <strong>of</strong> special <strong>and</strong> guaranteed quality. This relates first<strong>of</strong> all to eggs from free range, eggs from semi-intensive system, eggs from deep litter <strong>and</strong>enriched cages which provide primarily poultry welfare. On the other h<strong>and</strong>, enriched eggsappeared on the market, eggs enriched with omega 3 <strong>fatty</strong> <strong>acids</strong>, selenium, certain vitamins,etc. which satisfy specific dem<strong>and</strong>s <strong>of</strong> certain consumers. Eggs from organic production arespecific since it is still not confirmed that these eggs have better quality than conventionallyproduced table eggs, however they have certain place on the EU market.Many participants in the chain <strong>of</strong> table egg production have developed serious strategy <strong>of</strong>production <strong>and</strong> marketing <strong>of</strong> eggs based on new regulations <strong>of</strong> European Union relating topoultry welfare, origin <strong>of</strong> eggs <strong>and</strong> consumer opinions [9, 7, 3, 21, 18, 2]. Freshness <strong>and</strong>safety <strong>of</strong> product are still two main criteria for purchasing <strong>of</strong> table eggs, however productionsystem as one <strong>of</strong> the important factors is also considered by consumers when purchasing theproducts.Comparative investigation <strong>of</strong> different production systems ant their effect on egg quality wasresearch topic <strong>of</strong> many researchers <strong>and</strong> obtained results are very different.
