In many categories <strong>of</strong> food for animals it would be a significantsource <strong>of</strong> potassium <strong>and</strong> sodium (Table 1) which are necessary for the regulation <strong>of</strong>osmotic pressure in body fluids <strong>and</strong> acid-base balance in the body <strong>of</strong> animals. Potassiumplays an important role in nerve <strong>and</strong> muscle irritability, <strong>and</strong> participates in themetabolism <strong>of</strong> carbohydrates.CONCLUSIONAfter using sugar beet molasses as hypertonic solution for successful osmoticdehydration <strong>of</strong> apples, it is nutritionally <strong>and</strong> sensory very good raw materials for animalnutrition. Molasses reserves color, smell, taste <strong>and</strong> other physical properties <strong>and</strong> fromnutritive aspect is better quality, because some compounds diffuse from the plant cellsinto the osmotic solution during OD process.
