O sorvete, alimento agradável e amplamente consumido por todosos públicos, desperta interesse da indústria e da comunidade científica como potencial carreadorde culturas probióticas por causa das condições tecnológicas favoráveis do produto, como afirma Cruzet al. (2009).Os alimentos regionais leite de cabra e mel de abelhas, além de estarem diretamente relacionadosao desenvolvimento socioeconômico da região Nordeste, apresentam potencial agregador de valores,tanto em alimentos tradicionais, quanto no desenvolvimento de novos produtos. Assim, um sorvete deleite de cabra e mel de abelhas que permita a adição de probióticos parece ser alternativa promissora nomercado de alimentos funcionais, inclusive com apelo comercial elevado.Nesse contexto, o presente estudo pretendeu aliar os valores nutricionais do leite de cabras e domel de abelhas no desenvolvimento de sorvetes como opção viável de veicular o Lactobacillus acidophilusNCFM, assim como seus benefícios probióticos, sendo avaliadas as características físico-químicas,acompanhando a viabilidade da cultura e os parâmetros de pH e acidez durante armazenamento de-18° C durante 90 dias.
