his foci <strong>in</strong> a variety of <strong>in</strong>ternational publications. His doctoral work compar<strong>in</strong>g<br />

food <strong>and</strong> risk <strong>in</strong> United States <strong>and</strong> United K<strong>in</strong>gdom organic cha<strong>in</strong>s found a default<br />

preference for local food. Currently, his research <strong>in</strong>terests <strong>in</strong>clude East African<br />

dairy development <strong>and</strong> organic dairy politics of smallholder pasture dairy<strong>in</strong>g visà-vis<br />

agribus<strong>in</strong>ess <strong>in</strong> the United States. He grew up on a dairy farm near Lynden,<br />

Wash<strong>in</strong>gton, United States.<br />

Jakob Skoet is an economist with the Agricultural Development Economics<br />

Division of <strong>FAO</strong>. After a brief spell <strong>in</strong> the Danish civil service, he jo<strong>in</strong>ed <strong>FAO</strong> as<br />

an economist <strong>in</strong> 1991. S<strong>in</strong>ce then he has contributed extensively to the preparation<br />

of numerous editions of The State of Food <strong>and</strong> Agriculture, <strong>FAO</strong>’s ma<strong>in</strong> annual<br />

flagship publication, each edition of which provides an <strong>in</strong>-depth study of a major<br />

issue <strong>in</strong> agricultural <strong>and</strong> rural development <strong>and</strong> food security. He was co-editor of<br />

the 2009 edition of the publication, Livestock <strong>in</strong> the Balance, which discussed the<br />

challenges <strong>and</strong> constra<strong>in</strong>ts fac<strong>in</strong>g the global livestock sector.<br />

Lisa Spence jo<strong>in</strong>ed Tate & Lyle’s Global <strong>Nutrition</strong> Group <strong>in</strong> May 2012 with<br />

several years of experience direct<strong>in</strong>g nutrition research at both the United States<br />

National <strong>Dairy</strong> Council <strong>and</strong> the American Dietetic Association, now the Academy<br />

of <strong>Nutrition</strong> <strong>and</strong> Dietetics, with a focus on cl<strong>in</strong>ical <strong>and</strong> practice-based research.<br />

She earned a Ph.D. <strong>and</strong> an M.S. <strong>in</strong> <strong>Nutrition</strong> Science from Purdue University,<br />

United States, along with earn<strong>in</strong>g her Registered Dietician credentials. Dur<strong>in</strong>g Dr<br />

Spence’s tenure at the National <strong>Dairy</strong> Council she directed the <strong>Nutrition</strong> Research<br />

programme with responsibility for manag<strong>in</strong>g dairy-farmer-funded research <strong>and</strong><br />

dissem<strong>in</strong>ation of scientific f<strong>in</strong>d<strong>in</strong>gs. While at the American Dietetic Association,<br />

Dr Spence directed practice-based nutrition/dietetic research <strong>and</strong> managed strategic<br />

plann<strong>in</strong>g for a member-based committee <strong>and</strong> advisory group. Dr Spence has<br />

published orig<strong>in</strong>al research <strong>and</strong> reviews on calcium, dairy, bone health <strong>and</strong> weight<br />

management. She has served on the United States Department of Agriculture’s<br />

review panels for human nutrition <strong>and</strong> obesity <strong>and</strong> childhood-obesity prevention.<br />

She has participated <strong>in</strong> several societies <strong>in</strong>clud<strong>in</strong>g serv<strong>in</strong>g on the board of directors<br />

for the International Society of Nutrigenetics/Nutrigenomics.<br />

Cather<strong>in</strong>e Stanton graduated from University College Cork, Irel<strong>and</strong>, with a B.Sc.<br />

(Honours) <strong>in</strong> <strong>Nutrition</strong> <strong>and</strong> Food Chemistry (1983) <strong>and</strong> an M.Sc. <strong>in</strong> <strong>Nutrition</strong> (1986).<br />

She received her Ph.D. <strong>in</strong> Biochemistry (1988) from Bournemouth University,<br />

United K<strong>in</strong>gdom. She cont<strong>in</strong>ued her research with Johnson & Johnson UK <strong>and</strong> as<br />

postdoctoral fellow <strong>in</strong> Department of Medic<strong>in</strong>e, Wake Forest, University Medical<br />

Center, W<strong>in</strong>ston-Salem, NC, United States, before jo<strong>in</strong><strong>in</strong>g Teagasc, Irel<strong>and</strong>, <strong>in</strong> 1994.<br />

Dr Stanton is currently Pr<strong>in</strong>cipal Research Officer at Teagasc, Moorepark Food<br />

Centre, Fermoy, Co. Cork, Irel<strong>and</strong>, lead<strong>in</strong>g a research programme on functional<br />

foods, with emphasis on milk <strong>and</strong> fermented dairy foods, <strong>in</strong>clud<strong>in</strong>g probiotics,<br />

<strong>and</strong> their impact on human nutrition <strong>and</strong> health, <strong>and</strong> has recently been appo<strong>in</strong>ted<br />

Adjunct Professor <strong>in</strong> University College Cork, Irel<strong>and</strong>. She has published over 150<br />

papers <strong>and</strong> was awarded a D.Sc. <strong>in</strong> 2010 by the National University of Irel<strong>and</strong> <strong>in</strong><br />

recognition of her published work. She was jo<strong>in</strong>t recipient of the Elie Metchknoff
