<strong>Milk</strong> <strong>and</strong> dairy products <strong>in</strong> human nutrition<br />

Between 1987 <strong>and</strong> 2007 per capita consumption of milk <strong>in</strong>creased throughout<br />

the develop<strong>in</strong>g world, except <strong>in</strong> sub-Saharan Africa (Table 2.1). Rate of <strong>in</strong>crease<br />

varied from 0.4 percent per annum <strong>in</strong> the Near East <strong>and</strong> North Africa to 9.7 percent<br />

<strong>in</strong> Ch<strong>in</strong>a, <strong>and</strong> both rates of expansion <strong>and</strong> levels of consumption differ widely. By<br />

far the highest regional consumption levels are observed <strong>in</strong> Lat<strong>in</strong> America <strong>and</strong> the<br />

Caribbean (LAC). On the other h<strong>and</strong>, per caput consumption growth <strong>in</strong> the region<br />

has been relatively slow, albeit with Brazil show<strong>in</strong>g a rate of growth well above the<br />

regional average. While meat consumption is grow<strong>in</strong>g faster than milk consumption<br />

<strong>in</strong> develop<strong>in</strong>g countries as a whole, milk consumption is <strong>in</strong>creas<strong>in</strong>g faster than meat<br />

consumption <strong>in</strong> East <strong>and</strong> Southeast Asia <strong>and</strong> South Asia (Table 2.1). <strong>Dairy</strong> products<br />

are the major source of animal prote<strong>in</strong> <strong>in</strong> the diet <strong>in</strong> South Asia <strong>in</strong> particular.<br />
